Anyone got any easy, healthy, vegetarian meal ideas.

We've got stuck in a food rut, same meals repeated over and over. It's getting so boring but am so uninspired to try something new.

Any ideas?

This is what we eat at least 3 times a week. It is quick, easy, one-pot, keeps well, can be made in advance or last minute, and is a bit different every time.

Chop and fry an onion.
Add chopped garlic and ginger (both optional).
Add herbs / spices.
Add vegetable(s) of choice.
Add a tin of tomatos.
Add a tin of some sort of pulse (chickpeas / butterbeans / whatever you fancy).
Splash of wine if you've gone for herbs rather than spices.
Add a stock cube if you've not got tiny children.
Cook for a bit.

Serve with rice / flatbread / whatever you like.

Tonight we had aubergine and chickpea.

Last time it was butternut squash and snow peas, and instead of tinned tomatos I added a tin of coconut milk and some fresh chilies.

Broccoli and kidney beans is good.

You can make them - easy but slightly time-consuming until you get the knack. Just need to practise. Or you can buy them, which is much easier in theory, but you need to check your supplier as they really should be very fresh indeed. And is, of course, more expensive (since they only contain potatoes, a little flour, egg and seasoning).

You should probably try someone else's before attempting DIY though, just to know what they are meant to be like!

I love mattar paneer and use an adapted version of Nigella's recipe. I also make her lentil chilli recipe a lot - or variations of it. In fact, we're having it tonight.

One of the dds' faves at the moment is baked risotto - so easy and adaptable and delicious. Last week we did pea and leek risotto; this week we will have butternut squash and sage.

Another current favourite is Thai vege curry made with a decent bought paste and loads of fresh vege and coriander. My dds love spicy foods though; it may not be so popular with some children.

Also they love peppers stuffed with rice and served with new potatoes and salad.

Today we have had minute minestrone and spiced root veg and lentil casserole. Later in the week we will have cheese and tomato polenta, macaroni and cauli cheese bake, chick pea curry, mixed bean goulash.

Other things would be hoppin john, spicy kidney/pinto beans, brocolli and mushroom rice bake, corn chowder, cheese and tomato rice, honey baked lentils, various risotto, chick pea burgers, curried split pea dahl, beans and greens soup, pasta with greens sauce, potato and greens curry, green lentils with veggie sausages.

gnocci is next to fresh pasta in the supermarket. it's also nice with pesto, peas and cheese.

Our regular veggie emals include:

spinach and ricotta calleloni
chickpea, spinach and potato curry
pad thai
mixed bean chilli
bean fajitas
mushroom risotto
mushroom stroganoff
going to attempt a spinach and mushroom lasagne this week( we really like mushrooms, can you tell)
lentil soup/curry

It was one I found on here actually! im afraid i can't remeber who posted it, but if you search for pad thai recipe it will come up. Come to think of it, it might have been 'ohbling' or 'over my dead body' who posted it- although i may have completely made that up!

The recipe has chicken in it which we used originally and also prawns (we aren't actually veggie) but felt there are so many components to the dish anyway that it just didn't meat/seafood.

Janeite - which veggie-friendly thai curry paste do you use? I've found it hard to find any that don't have fish/shrimp in!

We live on stir fry veg+noodles, risottos, pasta with tomato or mushroom sauce, cheese and spinach pasta bake, lentil bolognaise (or quorn bolognaise), chilli non carne, various veggie curries (bung veg in with spices, serve with rice ), feta and spinach pie, quiches, pizza , aubergine parmigiana, and nut roast for my roast dinner obsessed ds.

It's one called Thai Taste, available from Sainsbo's. Its ingredients are listed as: Garlic, Green Chilli, Onion, Lemon Grass, Salt, Black Galangal, Galangal, Kaffir Lime Peel, Fennel Seed, Coriander, Pepper.
