Your best vegetarian quiche combinations please...

I'm relatively new to quiche making and so far have mostly gone with bacon/leak, bacon/tomato options. I need to make a vegetarian quiche for guests tomorrow and need ideas.

I thought broccoli and roquefort but do I cook the broccoli first? Any other suggestions? I love quiche with tomato so tomato options would be good.

How about Spinach and Ricotta or Feta and Courgette? I've got recipes for both fillings if they sound of any use...

Asparagus is gorgeous in a quiche -its just about the end of the asparagus season though but you might be lucky to still get some

I do a mean Spinach, Feta and Onion quiche. Need to cook the onions and spinach first. I also always bake the pastry blind too. (Sorry if I'm teaching Grandma to suck eggs).

Butternut squash, onion and mature cheddar. Cook the squash and onions first. A bit of thyme with it too works well.

Spinach, feta and pinenut - I LOVE that one

Caramelised onion, red pepper and goats cheese is yummy too

Ooh, thanks. Spinach and ricotta sounds good. Asparagus is fab but I was a bit worried about whether i'd get any. Butternut squash is what I was going to do but thought I might do a butterbut/goats cheese/pine nut salad which I do which is brilliant and looks good. But if I get bored and don't feel like making that, I might go with that option.

Recipe for Spinach & Ricotta tart:
(assume you have blind baked shortcrust pastry case)
6oz fresh cooked spinach, lightly chopped
1 small clove finely chopped garlic
4oz ricotta
1 large egg beaten
1oz grated parmesan
3 tablespoons double cream
fresh grated nutmeg, chilli powder, salt and pepper.

Combine spinach, eggs, cream, cheese & garlic. Add pinch nutmeg and pinch chilli along with salt and pepper. Pour into pastry shell. Cook for approx 30 mins gas mark 4, until set with golden brown crust.

Oh god. The goats cheese one sounds good too. I was going to do one meat and one vegetarian, but now I think I might do one spinach ricotta and one peppers and goats cheese. I think it's a great combination - I sometimes do roasted peppers and goats cheese with couscous and it's delicious.

This whole evening has turned into a bit of a nighmare - I didn't know it was happening first, then i discovered half the guests are vegetarians and all of this has to be prepared, shopped for etc when I will only leave work tomorrow at 6pm if I'm lucky.

Even if its just cheese and onion, if its any strongly flavoured cheese it will be lovely. Fry the onions first!
