Ooh, thanks. Spinach and ricotta sounds good. Asparagus is fab but I was a bit worried about whether i'd get any. Butternut squash is what I was going to do but thought I might do a butterbut/goats cheese/pine nut salad which I do which is brilliant and looks good. But if I get bored and don't feel like making that, I might go with that option.
Recipe for Spinach & Ricotta tart: (assume you have blind baked shortcrust pastry case) 6oz fresh cooked spinach, lightly chopped 1 small clove finely chopped garlic 4oz ricotta 1 large egg beaten 1oz grated parmesan 3 tablespoons double cream fresh grated nutmeg, chilli powder, salt and pepper.
Combine spinach, eggs, cream, cheese & garlic. Add pinch nutmeg and pinch chilli along with salt and pepper. Pour into pastry shell. Cook for approx 30 mins gas mark 4, until set with golden brown crust.
Oh god. The goats cheese one sounds good too. I was going to do one meat and one vegetarian, but now I think I might do one spinach ricotta and one peppers and goats cheese. I think it's a great combination - I sometimes do roasted peppers and goats cheese with couscous and it's delicious.
This whole evening has turned into a bit of a nighmare - I didn't know it was happening first, then i discovered half the guests are vegetarians and all of this has to be prepared, shopped for etc when I will only leave work tomorrow at 6pm if I'm lucky.
