Calling all vegetarians. What is your favourite meal that encorporates new potatoes?

New potato salad with a barbeque (veggie sausages in dh's cse)

Dh now eats fish occasionally so we have salmon, new pots (with butter and garlic) and peas.

I'm trying to think of more stuff.

new potatoes roasted with peppers, tomatoes and mozzarella

Salad with new potatoes, red onion, green beans, cheddar, mustard dressing (from the Cranks cookbook)

roasted whole new potatoes with whole garlic cloves and olive oil

or for a bbq, skewers with new potatoes, mushrooms, onions and peppers marinated and covered in a sweet chilli glaze and bbqed

or this from the vegetarian society. I made it for some vegie friends for a picnic and they loved it.

Scandinavian style potato salad, made with soured cream, red onion & dill (mmm), served with hot lemony roast chicken & green salad

or

'Home fries' made with leftover new potatoes, slightly crushed & fried up in a bit of olive oil with onions, peppers & seasoning and served with fried eggs and crispy bacon

All of the above sound nice, too, though!

Also, just remembered, something strictly for carb lovers....

I first had this in a pizza place in Miami Beach (can't remember the name of it now but if you've been to MB you'll know the one I mean - the little crowded takeaway on Collins Ave that's open really late and always packed...):

Thin, crispy based pizza with very thinly sliced, garlicky, rosemary-sprinkled new potatoes on top. Divine.
