What can I make as a lunch box snack for me and DP other than flapjacks?

Have been making flapjacks for some months for me and DP to have in our lunchboxes (well, at home for me, since going on maternity leave), and am slightly running out of inspiration for fruit/chocolate chip/seed combinations to put in them.

Does anyone have any ideas for what I could make as an alternative occasionally? It has to either be able to be frozen and taken out on a day to basis, or last for at least a week (like the flapjacks, in an airtight tin). I am completely stumped!

Or if anyone can think of anything original to put in flapjacks...

Could you make something simple like rock buns? Or a fruit cake to slice up. A decent cake would keep for a week. Personally I would freeze something like rock buns as they are not so good after a day or two.

I nearly asked that misdee, but then I realised that although most of us think of flapjacks as healthy (the oats are I guess) all that syrup and margarine/butter somehow makes them no better than cake imo.

Oooh, millions of ideas! Clearly I am an unimaginative fool.

Doesn't have to be terribly healthy, but does have to be vaguely filling - i.e. fruit cake probably a winner, angel sponge cake probably not!

Fridge cake, that is inspired Misdee! Although I will probably eat it all before any makes it into DP's lunch box.

Swedes do you have the recipe for josceline's mince pies? I always without fail love her stuff, but can't fine the recipe in the book I have...

Am also loving the suggestions of cookies, muffins, carrot cake etc, but do we think these things will either last for a week or freeze? Would hate to waste all my precious baking!

cookies you can make the dough for and keep it in the fridge, backing only as much as you need each day. The dough will keep in the fridge all week.

Muffins and cake you can freeze, cake freezes best without the topping if it is cream based, but you can make it, ice it, cut it into wedges, open freeze and then wrap the portions up and keep in the freezer, or cut up and freeze uniced and put fresh icinf on each portion on the day (bit of a faf, I'd probalby make cakes that don't rewquire icing or that can be frozen with th eicing.

Drop scones (the ones where you use yoghurt -an Annabel Karmel recipe I think. Did I her she got an MBE?). They freeze really well and are very yummy.

any muffins - wrap them individually, freeze them, and then just stick them in lunchboxes frozen - they will always thaw by lunchtime (or so DS reliably informs me)
