I'd like the recipe for microwave lemon curd - I always do it on the stove.

It wasn't me but there is a recipe for it in my "Traditional English Preserves" book bananas? Traditional English??

450g bananananas
900ml orange juice
juice of 1 lemon
350g rich brown sugar

cho bananas, put in pan with other ingredients, bring to boil and simmer gently til bananananas soften and mixture is thick and dark, stirring frequently. Pour into warmed jars, seal and label.

Microwave Lemon Curd:

Am assuming a 750 watt microwave, amend accoerdingly.

Ingredients
Grated rind and juice of 4 lemons
100 g butter, diced
450 g caster sugar
4 eggs, beaten

Method
Mix together lemon juice, rind, butter and in a pyrex-type glass bowl. Cook on high for about 4 minutes until butter has melted. Give it a stir and then stir in the eggs.

Cook on high for 5 - 7 minutes
Stop and whisk every minute
Do not overcook or you will make egg toffee
When the curd coats the back of a spoon then it is ready

Cool for 5 miutes, whisking every minute then pot into sterile jars.

Keep refrigerated for up to 2 weeks.

Was definitely not me - I only looked it up out of curiosity! I searched the archives too and Bree said it was yummy although there wasn't a recipe!

I am pondering banana jam too.

The lemon curd is easy-peasy - takes me about half an hour from start to finish.

Oh, and makes about 2 lb of curd.

My English Preserves book is a revelation. Peanut butter isn't traditionally English is it? There is also a recipe for Cabbage Pickle if anyone is interested...?
