here is steamed fish chinese style

Ingredients
Serves 4
Prep 10 min
Cook 15 min
600g firm, white fish fillets
Sea salt and pepper
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice wine or dry sherry
1 tsp caster sugar
1 chilli, shredded
2cm knob ginger, shredded
1 garlic clove, crushed or sliced
2 spring onions, finely chopped
Coriander leaves for serving
METHOD: Cut the fish into bite-sized chunks and toss in salt and pepper. Combine the soy, sesame oil, rice wine, sugar, chilli, ginger, garlic and half the spring onions, and toss the fish well. Steam over simmering water for 10 minutes until cooked, turning the fish once. Scatter with coriander and remaining spring onions and serve with the juices, and steamed rice.

marinade chicken breast chunks in soy sauce, vinegar, worcestershire sauce, honey and tabasco and a bit of olive oil

Fry up and serve on salad with avocado

Bbq chicken


For the marinade
3 garlic cloves, crushed
6 tbsp tomato purée
4 tbsp balsamic vinegar
4 tbsp dark brown sugar
4 tbsp Worcestershire sauce
1-2 tbsp Tabasco sauce
2 tbsp Dijon mustard
1 tsp smoked sweet paprika
1 tbsp chilli powder
olive oil, to drizzle
8 free-range chicken legs, trimmed of excess fat

1 In a bowl, mix together the marinade ingredients. Spread over the chicken and leave to marinate for at least an hour or overnight.



2 Scrape off any excess marinade from the chicken pieces and drizzle with a little olive oil. Place on a hot barbecue or grill and cook for about 25 minutes, turning occasionally. When browned, brush the chicken with the marinade and cook for another 10-15 minutes, turning and basting frequently, until cooked through. To test if the meat is done, insert a small knife into the thickest part of a chicken leg ? the meat should no longer be pink at the bone.

If you want to cook this in the oven, bake the chicken legs at 200C/Gas 6 for 30-40 minutes until cooked. Baste with the marinade 10 minutes before the end of the cooking time.

ALSO - Somebody posted a recipe for chickpea curry on a thread like this a while back (I think it was your veggie recipe thread, enid - do you not have any cookbooks?). I made it and it was delish, then with stunning efficiency, I put the recipe through the washing machine. If anyone remembers what the recipe was, I'd be v grateful for a reminder.

piss easy enid

i am no cook but even i can do it

  • fry small cubes of potato in olive oil til soft
  • set aside
  • fry chopped onion
  • when onion soft and clear, add potato back in
  • add seasoned beaten eggs
  • leave over low heat for a couple of mins
  • bung under grill to cook through from top

    you can add other veg as desired - peppers, courgette etc

greek salad I just dice up cucumber into chunks, chop up tomatoes, dice feta, add fresh raw onion on the top, dress with olive oil and white wine vinegar and then shake some dried oregano or mixed herbs over the top, plus salt and pepper

Chicken just rub with oil and sprikle with lots of herbs. Stuff a ibt of garlic in too if you like
