Yummy lentils recipes needed?

So I want to add lentils etc to my diet for protein and I'm looking for really tasty recipes.

I made a lovely vegetable soup which was tasty but I need some more recipes. I'm thinking curries spicy soups anything else that's nice.

For red split lentils I'd always suggest a dahl, or soup. I make a lentil bake that's gorgeous (think of it as a lentil meatloaf).

Have you tried puy lentils? They're really good - keep their shape when cooked. I use them with quorn sausages to make a wintery stew that's really filling and very cheap.

Do you want to add other pulses too? Chickpeas, beans, etc?

Let me know if you'd like recipes, as I'm happy to write them up.

I usually make either soup or Dahl which we love but something new would be good.

I've just made tea.
Lentil cottage pie. More or less excatly the same as cottage pie but with lentils and veg stock. My family like loads of cheese on the top when it goes in the oven.
Lentil brownies are ok as well.

This dhal with coconut and sweet potato is utterly delicious. Also really good with some cooked smoked haddock flaked in.

Here you go!

Lentil and mushroom slice (serves 4)

175g red lentils
350ml vegetable stock
2 onions, chopped
2 cloves garlic
300g mushrooms, sliced
1 egg, lightly beaten
60g strong cheddar, grated
1 tbsp tomato puree
2 tbsp chopped fresh parsley

  • cook the lentils in the stock for about 15 minutes, until all the liquid had been absorbed
  • meanwhile fry the onion, garlic and mushrooms until soft
  • mix all the ingredients together and season to taste
  • turn into a greased shallow baking dish, and cook at 190ºC for about 35 minutes, until browned and set

Bloom - I'm happy to try any pulses or lentils, I've never really used them before and I'm trying to get them into my diet as a source of protein as I don't like eating a lot of meat.

If you wouldn't mind posting the recipes that would be great Smile

Tinned chick peas are great for replacing meat in curries.

A friend sent me hundreds of veggie recipes years ago, and there are loads of pulse recipes, which I go back to time and again. I'm happy to share with anyone.

We had a really nice green lentil dish in Spain which included spices and coriander but I can't remember exactly.

I think over there every family has their own 'lentejas' dish, or so a (Catalan) friend told me.

If anyone has any good ones I'd love to hear. This thread is making me hungry.

I do a red and green lentil Bolognese that always goes down well. Super easy to make, so I tend to just wing it Blush

We make bean chilli which is basically an onion, 3 tins of beans/pulses, a tin of tomatoes, a sachet or chilli con-carne spice and some frozen spinach cubes all cooked together. Delicious, healthy and cheap!

Lentil and spinach (or chickpea) dal

Fry 1/2 tsp cumin seeds briefly in a tbsp. of olive oil and a tbsp. of butter, add 1 chopped onion gently saute until soft abt. 5 minutes. (AT the same time cook 300g red lentils in 750ml of water - boil then simmer about 12 mins until water absorbed.) Add to the onion half a tin of chopped tomatoes and 1/2 tsp ginger, 1/2 tsp chili flakes plus 1 tsp turmeric and 3 cloves of crushed garlic. Cook 4 minutes gently. Add cooked lentils cook for about 10 to 15 minutes, add drained tin of chickpeas and/or two handfuls chopped spinach - cook about 4 minutes. Add 1/2 tsp garam masala. Season to taste with salt and coarse black pepper. Serve with rice or with naan bread - Sainsbury's do a nice garlic variety.

Rose Elliot's 'The Bean Book' has some good lentil and other pulse recipes. But it's a reprint of an old recipe book and a bit timid on spices so I usually up the garlic when it's called for.

Here are my top three:

Veggie cottage pie with red wine and lentil filling, topped with sweet potato mash:

Spicy sausage lentil stew

Cook 250g green lentils with 4 cloves garlic and mash the cooked garlic in when drained. Stir in 1tbsp olive oil and 2tbsps red wine vinegar.

Serve with roasted sausages and spicy tomato sauce (I cheat, I use Lloyd grossman tomato and chilli instead of making one). You can mix it all together or serve the sausages and sauce on top of a bed of lentils, as you would spaghetti and meatballs.

Lentil salad

Cook green lentils as above, let cool and dress with oil/vinegar. Add half a finely chopped red onion, crumbled feta, wilted spinach and pomegranate seeds with some crispy fried pancetta cubes. Pile high and enjoy warm.

There's also a really good (cheap and easy) red lentil curry on netmums.

Red Lentil Curry (As my mum makes it)

Fry onions and garlic in some olive oil, add spices (Kurkuma, Chilli, Cumin, Ginger, Curry) and Lentils. Fill up with a tin of chopped tomatoes and some water if needed, then wait until the lentils are soft and add coconut milk. Add salt and pepper to taste and then mash the curry until it has a thick-ish consistency. Serve with rice
