Vegetarian food ideas?

Hi I'm new Blush

I know you have probably read this type of thread loads of times but I'm really stuck for vegetarian options. I use quorn a lot in curries, pasta, casseroles, stews but I really don't know what else to cook. Can any more experienced vegetarians recommend me something really yummy please? Smile

I live on quorn and smoothies. If I want a pizza I buy just a cheese one and add pineapple myself. I need some inspo.

Have you tried YouTube, there are lots of vegan channels that have good recipes.

I’ve been vegetarian for 20 odd years and have hardly used quorn
Favourites here
Quesadillas with mixed beans and courgette
Various pasta/gnocchi dishes
Panned/chickpea/mixed veg/ lentil curries
Mixed bean chilli
Home made bean burgers
Bean stew
Stir fries
Bubble and squeak
Stuffed mushroom/courgette
Imam biyaldi
Jacket with various fillings
Roast veg and chickpeas with hallumi

I like Jack Monroe’s carrot, cumin and kidney bean burgers.
I occasionally eat Quorn but prefer veg, bean or pulse based dishes.
If I make a chilli I just use beans and veg.
A stir fry I just do usually veg, with rice noodles and a sauce then top with either omelette strips or cashews.
I also enjoy a big stew of root veg and butter beans.
Loads of stuffed vegetable options, mushrooms and peppers really easy just fill with cous cous, herbs veg and top with cheese.
Falafel in pittas make a nice lighter meal. Plenty of falafel in the supermarket but I recommend th3 Sainsburys recipe for baked BNS falafel. Also a bit healthier.

We eat quorn sometimes but I prefer not to have more than the odd meal based around it. We eat lots of curries, veg casseroles and bakes, bean and veg chili etc but if you're looking for something different to one pot type "wet" dishes maybe try:

Quiche, frittata, various tarts. They can be served with potato and veg for a more hearty meal or with salad if you just want something light.

Other ideas:
Stuffed peppers
Fajitas
Various veggie burgers eg bean burgers, mushroom & halloumi burger
Flatbread pizzas
Veggie lasagnas/cannelloni/aubergine parmigiana (need vegetarian substitute for the Parmesan) etc
Gnocchi
Risotto

There are lots of good sites for ideas and I recommend creating a Pinterest board to save recipes and pictures for inspiration. Oh but if you do then be prepared to lose an hour or more just browsing stuff Smile.

Veggie for 20 years and never eat quorn.

Buy a good cook book, Anna Jones or Hugh FW.

Go on good food, their vegetarian section is fab.

I'm no longer vegetarian but we only eat meat 2-3 times a week. Vegetarian meals this week are sweet potato tacos, roasted veg in tomato sauce with spaghetti, mushroom stroganoff and vegetable stir fry with tofu and rice noodles. If you like mushrooms this recipe is one of my favourites

Filo pastry ring with spiced spinach, onion, sun dried tomato and feta inside.
Roast Mediterranean veg with goats cheese or herby philadelphia stirred into pasta
Risotto with broad beans, leeks, mint, sugar snaps and grana padano
DC love quorn chilli with baked sweet potato or brown rice
They also adore peppers stuffed with brown rice, onion, cashews, peas and grated cheese
Skewers of halloumi, reppers, red onions, courgettes etc with rice and salad
Sweet n sour popquorn chunks (dipped in cornflour tempura and deep fried with a pineapple and pepper sweet and sour sauce
vegan thai curry: baby corns, peppers, sugar snaps in a peanut butter and coconut sauce flavoured with sweet chilli, ginger and lemon grass, with sticky rice

White bean gratin
Broccoli and Stilton quiche
Caramelised onion and goats cheese quiche
Risottos - creamy mushroom/lemony courgette/sage and butternut

I've just made a chickpea and spinach curry. Half for tonight with chapati and half in the freezer for another night.

We're not vegetarian but try to have a couple of meat free days per week. Tonight's tea was veggie and bean chilli. Fry onions and add a couple of roughly chopped peppers. I then use 1 level tablespoon of mild chilli powder and cook for a couple of minutes. Add chopped carrots and sweet potato with a jar of passata and a bit of veg stock. Cook until potato is tender. Then add butter beans and kidney beans and green beans and cook for another 5 mins so that the green beans are still crunchy. My carnivorous DH loves this!
