Brown bread ice cream

My gran used to make this when we were little - a delicious, chewy, caramelly thing. She definitely didn’t have an ice cream maker and neither do I. Does anyone have a good recipe? The ones I’ve found online seem either v elaborate or don’t caramelise the breadcrumbs first (fond memories of being lifted up to see in the eye level grill).

Any help would be very welcome! Thanks x

Sorry, not helpful, but my DH goes on and on about how wonderful his mother's brown bread ice cream was. Being Australian, I'd never heard of it, but did try it once in Betty's in York. Would love to get a good recipe if anyone has one!

M&S did one about 25yrs ago. It was delicious. Always planned onaking it, so malty. Please post a recipe if you find a good one.....

Ooh good! It is the food of the gods. In the interests of science I will try a few recipes then and report back.

That Rachel Allen one looks lush but I’m not sure it’s the one I’m thinking of - I’m sure gran’s didn’t have cinnamon or anything that fancy in it. And I don’t remember boiling sugar syrup.

So pleased other people remember it!!

My Nana would never have gone to all that trouble! Yet somehow it was delicious and I don't know the recipe 😭

It is indeed the Food of the Gods (along with zabaglione, obvs.) - here’s my family recipe, which I think came originally from ‘The Dinner Party Book’ - it’s a bit simpler than the evilharpy’s, with no egg, but works pretty well.

I know, it’s awful. Steps I remember are caramelising the breadcrumbs and whipping cream, and cooking something in a saucepan which I guess was the custard. It was a big loaf of brown bread grated on the cheese grater as well. And I remember most of all the TORTURE of having to wait until it was frozen to eat it!

I can confirm that the Rachel Allen recipe is incredible. I make it quite regularly (wheaten bread is made a few times a week in this house so there is always a fresh supply) and it never lasts long.

It's in Robin and Carloyn Weir's definitive book of ice creams - their recipes are brilliant so I would definitely recommended the book if you like ice cream.

The dairy book of family cookery recipe, with the rum in, is the one I use too. It's lovely.

Ok. I have tried this one - was the only one I had all of the ingredients for. As with everything I make it was a bit hampered by my many small helpers, and we only had soft sliced brown bread which didn’t crumb very well. The flavour was absolutely delicious....but a bit too rich I think for what I remember. Also I added some vanilla and no rum.

I am enjoying your company on my quest!! Do you think I could ask Felicity Cloake to do it as a “how to cook the perfect” thing??

Not quite the same but at Christmas we had Heston Blumenthal's Marmalade on Toast ice cream. That was majestic.
