A vegetarian meal that can be prepared and reheated?

Once or twice a week can’t eat as a family until 8.00pm. We are all vegetarian: 2 adults, 2 teens and an 11 year old.

It’s later than I would like but no choice. I need some new meal ideas that are either reheatable or very quick to prepare

We have had things like veg curry or chilli from the slow cooker but eating curry late is not ideal.

Tonight it’s going to be lasagne. With frozen peas an tinned sweet corn- my idea of speedy veg that won’t be soggy. Last week was veg and lentil soup.

Any inspiration out there?

Tortellini and pesto takes literally 3 minutes. Prepare side salad ahead (no dressing) and you have a good meal

Stir fry and noodles. Include some tofu/mushrooms to bulk it out a bit.

some taglitelle or packet of tortilini with one of those dolmio sauce packets mixed through or pesto.
can you have your timer cook your some jacket potatos.with beans and tuna mayo and a salad
what about making a mince base qourn for you obviously or a veggie tomato stewy base thing.keep in tub in fridge.then you can deside whether to put a pastry covering(ready rolled genious pie topper)a crumble topping.have it over pasta or with rice.
quick rice dish.cook rice and stir through mixed frozen veg.suprisingly tasty :)
saute down a big batch of peppers,cherry tomatos.jar of dolmio or tinned tomatos.garlic and onions.then keep and swtich up anywhich way you like.it can go with anything and will keep for a few days.
risotto.that can be kept and reheated.
veggie shepherd pie.
enchiladas.all these things can be prepped then kept in fridge or reheated.
butternut squash stew
what about something like a caramilied onion,goats cheese and herb pie basically a veggie quiche.then you can serve cold or hot.
make some potato hash that you can pull out the freezer or keep in friedge for later.
a frittata.so easy to cook.variation are endless
mac and cheese
pasta bakes.
burritos
calzones
veggie falafel
veggie meatballs
veggie burgrs
veggie fajitas.

I made a really nice pasta bake last night. Cook pasta. Fry red onion, garlic, peppers, mushrooms. At chopped tomatoes, can of kidney beans, season well and add a good glug of balsamic and some mixed herbs. Add veg mix to pasta, stir and pour into oven proof dish. Top with cheese and breadcrumbs and bake for 20 mins.

Some good ideas here. I hadn’t thought about risotto- thanks.

I’m a bit fed up with pasta. Need a take a break from it for a few weeks.

We have just had a middle eastern chickpea, onion, tomato and aubergine thing (Jamie Oliver) with flatbreads, feta and fried eggs. Would reheat nicely I would imagine.

Veggie fajitas are nice, quesadillas, flatbread pizza, halloumi/mushroom burgers, frittata, soup/cheese on toast.

Halloumi pesto pasta - lots of green veg (I use broccoli, frozen spinach, green beans, courgettes, mushrooms, spring onions), chop it all up and store in a Tupperware till you need it. Chop up a block of halloumi into small cubes.
Put on a pan of water for the pasta, fry the veg in another pan in a bit of olive oil and the halloumi in a dry frying pan till it's browned. When everything's cooked mix it together with a good dollop of pesto. Tastes great and if you prep the veg and halloumi beforehand it cooks in the time it takes to boil a pan of pasta.
