Vegetarian lunches that don't need to be warm

I always used to take soup or leftovers in to work but my new job doesn't have a mincrowave.

Anyone have some ideas for nice stuff I can take that doesn't need to be hot?

How about making wraps with falafel and hummus or spinach and halloumi? Or you could make a couscous salad with roasted veg (squash, onion etc.) some spices and pine nuts... lots of things really!

Orzo pasta at room temperature with roasted cherry tomatoes, mini mozzarella balls, olive oil, loads of fresh basil, salt & pepper - could eat this every day

Or invest in a thermos so you can still have your hot soup.

I'm assuming you have access to a fridge? Things that I sometimes do are:
Quiche, salad and coleslaw.
Leftovers that don't necessarily need to be heated like leftover pasta. Or sometimes I cook noodles the night before and have cold noodles the nest day. Also if you cook veggie burgers or anything similar the night before they can work very well in a wrap the next day.
Bagels.
Cold pizza.

This is a really good salad:

I keep a couple of different pesto's in the cupboard for mixing in with pasta, toms, olives etc. I also try to roast or griddle up some veg and keep in the fridge for adding to leftover rice, quinoa, couscous, freekah etc.

If you toast nuts and/or seeds and take some in a small seperate container you can add them at lunch to the salad for great extra crunch and texture.

Mini Meze's are also good - e.g. some hummous and crudites, a stuffed pepper and a bean salad.
