favourite salad?

I'm having more salads for lunch as the weathers nice and I was wondering what everyone's favourite was?

Today I had:

Mixed leaves, cucumber, cherry tomato, red onion, leftover roast chicken, some cheese cut up small, a few cashews and some grapes. Tsp of pesto drizzled over and a spoon of hummus on the side with a toasted wholemeal pitta.

I usually just make it up but wanted some new ideas. Grin

I love tomato and feta. Red onion, spinach, mixed colour tomatoes, cucumber, oregano, and basil- drizzled with Red wine vinegar , and black pepper.
Roll cubed feta in some flour, and fry in some oil for three/four minutes until golden and crispy on the sides. Add to salad and eat.

It's amazing- really worth frying the feta imo

I'm trying to make mine look more exciting and saw salads in a jar so been having them, lettuce, cucumber, tomatoes, Apple, crayfish tails, smoked salmon, celery, red pepper and boiled egg. Everyone has said how nice they look.

Also got some ambient bags of bulgar wheat stuff to mix in.

Salade Nicoise
New potatoes
Green beans
Lettuce
Tomatoes
Spring onion
Tin of tuna steak
Anchovies
Hardboiled eggs
Black olives
all arranged how you like on a plate with mustard vinaigrette dressing poured over

1 large head broccoli, cut into florets
1 small red onion, chopped
6 slices cooked bacon, crumbled
1/2 cup dried cranberries
1/4 cup sunflower seeds
1/2 cup almonds, toasted in a dry pan

Dressing: 1/2 cup mayonnaise 1/3 cup white sugar 3 tablespoons red wine vinegar.

Mix all non-dressing ingredients together.

Combine dressing ingredients. Pour over salad and mix thoroughly. Best if made an hour before eating.

Really good and an easy way to fill up on broccoli!

My usual go to salad:

A big handful each of raw:

Cucumber
Cauliflower
Broccoli
Red pepper
Tomato

Small shallot, finely chopped

Can of chickpeas/cooked lentils/mixed bean salad, well drained.

Handful chopped feta.

Half handful dried cranberries.

Pumpkin seeds.

Mix all above ingredients.

Dressing: olive oil, maple syrup, mustard, white wine vinegar.
3 tbls OO, 1 tbls maple, 1 tbls mustard, 1 tbls WWV.

Combine thoroughly, pour over salad, mix well.

Really good for lunches as it transports well.

My new favourite is -

Sugar snap peas sliced in half
Raddish - grated
Cucumber batoned thinly
Spring onion sliced thinly

2 tabespoons cider vinegar
1 tsp honey

It is very yummy! We have it with grilled chicken breast or halloumi Smile

I actually never ate a salad until a few months ago, I went into a cafe and they had a huge sign with a goats cheese salad so I thought I would try it.
Oh my GOD, it was the most amazing thing I have ever tasted. I try to recreate at home, it is absolutely delicious.

It was:
mixed leaves, loads of rocket and dark leaves
Sun dried tomatoes
Warm goats cheese
Tiny bits of bacon
Balsamic dressing
And pine nuts

The cafe is way across the other side of town and I have driven over 3 times since to have it, I am going again tomorrow.
I am reading this thread with interest, I feel like a whole world of food has been opened up to me.

Mine is chicken (done in the griddle pan) and bacon pasta (wholewheat) salad. I serve it with baby plum tomatoes, salad onions, red peppers, cucumber, sweetcorn, avocado, hard boiled eggs, beetroot and green pesto. I usually drizzle balsamic vinegar or olive oil as the dressing.

On occasions, I will add gherkins into it (if I have any in my house that is)

Leaves
Hot smoked salmon
Avocado
Cucumber
Tomatoes
Cashews

It was lovely.

This is my favourite at the minute

Spinach + whatever lettuce I have on hand
Cucumber
Red pepper
Celery
Spring Onion
Beetroot
Avocado mixed with a tsp of honey and 2 tsp wholegrain mustard
Tuna mixed with 0% greek yoghurt, lemon juice & black pepper
Soy roasted sunflower seeds

I also love using bourbon bacon and teeny tiny croutons instead of tuna & yoghurt and sunflower seeds. I must admit with salads I like to get big portions with the least amount of calories.

Greek.

Tomato
Cucumber
Red or spring onion
Feta
Lemon juice
Olive oil.salt pepper

Can also add:
Red pepper
Avocado
Radish
Rocket or lettuce.
Sprinkle of dry Herb's

Sweet potato/pumpkin, roasted in small cubes
Baby gem lettuce or spinach
Feta or goats cheese
Crispy bacon
Toasted pine nuts
(optional) grilled mushrooms
Serve with a light dressing, like French.

Another one:
Roasted Beetroot
Baby gem lettuce or spinach
Goats cheese
Walnuts
Fresh mint
Serve with a balsamic dressing

Forgot to say you can add chickpeas to either of those salads for a bit more protein. And I love the things, so would eat by the canful if I was allowed (LCing at the moment)

Got to be rocket leaves, red onion sliced thinly, watercress, red peppers sliced thinly, hard boiled egg, cucumber, and red grapes, and home made honey and mustard dressing (teaspoon honey, teaspoon grain mustard, cider vinegar and shake til mixed). I love strong flavours so tend to skip the tomato as it can be a bit insipid (unless sundried in oil which is yummy). Some coleslaw or home made potato salad and you have a brilliant meal.
I sometimes cheat and buy the £1 salad bowls from supermarkets and add to them when desperate for a salad fix.

Look at salad love. Great book.
I love Greek salad.
Fennel is great on a salad.
Blue cheese or smoked salmon.

A simple Greek salad is lovely,

Use one cucumber, slice it lengthways and scrape out the wet seedy stuff with a teaspoon, and slice up. Core and de-seed the nicest tomatoes you can find, chop them up. Add sliced red onion, and black olives. Put a piece of feta on top, sprinkled with oregano.

Dress simply with olive oil and lemon juice.
