favourite vegan recipes please

After lots of thinking have decided not to eat red meat anymore. Or milk/dairy products. Couldn't bear the sound of the cows crying for their calves earlier in the year.
However still eat chicken and eggs...don't feel so bad about eating them (for now)

BUT - I really need some recipes! Help please...

you mean, red meat free, dairy free recipes then...

if you are going to do the dairy free thing 100%, you'll become a compulsive label checker, and know all sorts of odd facts like that McVities choc digestives have milk in, but the ones they sell at Lidl dont.

My vegetarian standbys are: indian recipes for vegetables; tofu; soups made with pulses; vegetable shepherds pie; couscous with chickpeas or vegetables

Mixed bean/veg chilli, can serve with rice or in tortillas
many types of vegetarian curry, potato, caulilflower, daals.
numerous risottos, although I do love some parmesan on there at the end.
Pilafs.
Lentil bolognaise

These are all staples round ours.

If you were to do a thread search on MN even, loads of people have posted some great recipes. Most of the above, I have posted at some point.

I totally diagree with the 'just being fussy' comment. My SIL is 'vegetarian' because she doesn't want to eat animals, yet she eats dairy products. I don't see how this is justifiable as the meat and dairy industry is inextricably linked. What do you think happens to the calves that dairy cows have?
I eat chicken because to be brutally honest, I don't believe that birds are capable of as much emotion as mammals (or 'red meat' whatever you prefer to call it). I totally understand that some people will disagree with me on that. Having said that, I make the choice to eat only free range chicken/eggs.

Sorry, that is just daft.

You are entitled to eat what you want, or don't want. Sorry that you only posted here for help with recipes, and people have disagreed with you, but I feel I have to post too.

Ok so chickens are not as cute as cows but they are still living creatures!! How do you think they feel when the farmer comes and takes their eggs away????

Chintzy, a vegan would not eat eggs (or any animal products) and a vegetarian would not eat chicken (or any animal meat).

However, aDadsTidings has posted some great sounding ideas - I'm off to search them myself!

Do you mean vegan or veggie? I think it's good that you're trying to eat less meat so really don't want to get into the whole "How can she call herself veggie if...." debate. Can't say much about vegan but can recommend lots of veggie things if you want?
