What goes with cauliflower gratin?

I have a recipe for a really posh cauliflower cheese - it has cream and pancetta and stuff. Thought it would be a lovely side dish for NYE dinner. But what would be the main dish? Help!

I think pork too. But given the pancetta in the dish it would also complement roast chicken (probably not special enough) or fish. A side of salmon or pancetta wrapped cod loin with tomato and herbs?

Roast chicken could actually be a sensible option. Ooh what about those little mini chickens? What are they called?

Sudden brain wave on chicken front- guinea fowl. Bit more flavourful than chicken, but not so gamey that it will scare people (most people will just think it's a chicken that is tastier than usual) so it is strong enough to stand up to the gratin.

As your cauliflower cheese already has pancetta in it, why not serve with a green salad and a tomato salad as a "lighter" meal?

Lamb! Cooked nice and pink. We sometimes have cauli cheese with lamb chops and it is very very tasty.

If it's got meat in already you could just do it with some baked potatoes and a salad with a mustardy dressing. Otherwise, leave out the meat from the cauli cheese and have it with baked potatoes and sausages.
