Exciting veggie option to go with roast beef dinner...?

Help! Hosting Mother's Day on Sunday (obviously!) and need a veggie option to go with the roast beef that's waiting in the freezer, will be doing the whole Yorkshire puds, roasties etc. to go with.

I can't think of anything other than boring nut roast or even more boring veg toad in the hole really...any ideas gratefully received please!

Puy lentil puff pastry lattice from Lieth's cookery bible is lovely.
Delias twice baked soufflé - use a strong cheese

Thanks all, mushroom Wellington sounds good to me, although dm has a slight lentil fetish so the lattice could be the way forwards!

lentil lattice http://foodfrom4.com/2012/05/19/lentil-and-feta-cheese-tart/ this is pretty close to the original. You can use a Cheshire/Lancashire/Wensleydale cheese if you prefer.
