Lentil and Vegetarian Recipies (especially for slow cooker)

Have just made my first thing ever in our new slow cooker (à yummy chilli con carne)and have a few other meat things lined up.

Would love some good lentil / veggie slow cooker recipies like dahl etc? I love nigel slaters Brown lentils in tomato sauce so that kind of thing we can have for dinner with Rice or cous cous? Am loving dinner being ready when we get in from work!

I made a lovely vegetable coconut curry in mine yesterday. I'll post the recipe later when I get home.

I'm also just getting to grips with my new slow cooker & finding it great so far.

Winter Vegetable Coconut Curry:

3 sticks celery, cubed
4 carrots, cubed
4 parsnips, cubed
2 tbsp olive oil
1 large onion, thinly sliced
2 garlic cloves, crushed
1 tbsp finely chopped root ginger
1 tbps curry paste
1 tsp ground turmeric
1/2 tsp crushed chillies or chilli powder
salt & pepper
300ml vegetable stock
200ml creamed coconut

Heat the oil in a large saucepan & add the celery, carrots, parsnips, onions, garlic & ginger. Cook for 10 minutes, stirring occasionally, without browning.

Stir in the curry paste, turmeric, chilli & seasoning. Add the stock, bring to the boil then pour everything into the slow cooker.

Cook on LOW for 6-8 hours, adding the coconut cream for the final 30 minutes. If the sauce is too watery you can stir in some ground almonds to thicken it.

I make red lentil soup/stew.

Tinned tomatoes
Tomato purée
Onions
Root veg such as carrot, sweet potato, squash
Herbs and stock
Sometimes red pepper instead of root veg
A few handfuls of red lentils.
Hot water

Blend for soup, leave chunky for stew. I sometimes put chicken drumsticks in.

Similar stew but with black or put lentils. Nice with sausages too.

I often make meat versions of these, but with a disproportionately high amount of veg in, so I can blend and have as veg soup the next day(s).

Do you cook it before putting in the slow cooker or just chuck it all in?

Ooh, following this thread with interest, as a vegetarian new to the delights of slow cookers! That curry recipe sounds amazing, will have to try it.

Also place marking for ideas. We have a new slow cooker & have made a red lentil thing v similar to Elvis's. Would be nice to have a vegi dish that wasn't always relying on tomatoes for moisture.

I have just prepared a red lentil dhal tonight for throwing in the slow cooker tomorrow. It's very simple to put together & already smells good. I'm putting it in the fridge now & will transfer it to the slow cooker in the morning. Will report back after dinner tomorrow night & post the recipe if it's any good.

I normally make this dahl on the stove but was wondering if it would still work in the slow cooker?

1tbsp oil
1 chopped onion
2 cloves puree garlic
2 chopped carrots
3/4 cup yellow split peas
1.5 cups chicken stock
1tsp turmeric
1tsp chilli powder
1.5tsp ground ginger
1tsp coriander
1 diced courgette
1 cup tinned tomatoes

could i just saute the onions, garlic and carrots and normal then chuck it in the slow cooker with the rest of the ingredients?

Theonlyoneiknow yes, I'm sure that would work. Saute the spices as well as the vegetables, then throw it in the slow cooker with the tomatoes & stock.

I hope it's nicer than mine Sad. I won't post the recipe as it wasn't great unfortunately, but I think it's because I overcooked it. I set the cooker to high to warm it up, then forgot to turn it down to low - so it got about 6 hours on high & the texture was too mushy. I also wasn't happy with the mix of spices. I might try it again & re-jig the recipe.
