Dairy free puddings

My mind has gone blank. We have friends coming to lunch on Sunday and one person doesn't/can't eat dairy. I cannot for the life of me think of a dairy free pudding which isn't just fruit salad. Ideas anyone?

Meringues and soft fruit - put whipped cream out for the dairy eaters and Alpro soya d/free yoghurt for dairy avoider.

Chocolate pots - dark milk free chocolate, separated eggs - I can give you a proper recipe if you'd like it, it's dead easy and yum.

Fruit tart made with puff pastry ( jus rol is dairy free).

Sorbet - I make a rhubarb and sloe gin one, again v easy, but the Rubicon mango one is pretty good too.

Or any kind of baked goods with Pure instead of butter/marg - you honestly can't tell with cakes and crumbles they taste just the same.

We have just had dairy free apple crumble with Swedish glacé dairy free ice cream. Or cake? If you search for vegan cake recipes there are some great recipes. HTHSmile

Rhubarb - of course! I have a freezer full of rhubarb. Love the idea of rhubarb sorbet Grin

If you have rhubarb, you could also make a nice rhubarb crumble? Otherwise, what about Baked apples or chocolate and prune mousse

Are they vegan? Obviously no jelly if so, or sorbet with egg white. Crumble, fruit pie and my lovely, simple, stodgy choc pudding all quite possible. Rice pud with coconut milk and mango is a great suggestion.

Any cake type thing made with marg not butter
Crumble made with marg
Bread and butter pud with marg

A lot of margerine has dairy in it, people don't notice but they do. It might not matter but do check if you need to be strictly dairy free.

Vitalite is good as its vegan, and pure are also dairy free but I prefer the taste of vitalite. There's loads of vegan/dairy free recipes on my blog: the verygoodbakery.blogspot.com just search via the dairy free or vegan tags. If you need any help adapting recipes let me know Smile
