Nice Soup Recipes Please!

Starting SW at the beginning of the year. All the soups I've made have been dreadful.

Tried vegetable and leek and potato so far. They just taste like boiled up vegetables.

Does anyone have any nice recipes / tips so I can enjoy some nice soups please?

Made a random soup last night and it was lovely for lunch today. 1 onion softened in fry light and add 30g chopped chorizio (5 syns in total but spread across add few servings so not too bad) .once chorizo is crisped up a little and colour released, take out chorizio and set aside. To the onions in the pan, add 1 tin tomatoes, stock pot, some chopped buttr nut squash and a chopped carrot. Add water to make it more soup like consistency and simmer until veg is soft.
Blitz up, add chorizio back in and a tin of mixed beans and voila, soup done. Add black pepper, paprika, chilli etc at the onion softening stage depending on how spicy you like it !

I've been using Oxo as stock. Do you think the stock pot type things work better?

3 sweet potatoes, an onion, a garlic clove, dried chilli flakes to taste and some veg stock - cook in big chunks for about 20 mins then blitz. A squirt of lime juice to serve. You can add wilted spinach to add speed if you want - I usually just have with a side salad. Syn free and lovely!

This Chinese style hot & sour soup is lovely. allrecipes.co.uk/recipe/1685/szechuan-style-hot-and-sour-chicken-soup.aspx

I often don't add the bamboo shoots and don't bother with messing about with the egg bit. I just use it as a starting point really and find it nice and tasty with a bit of a kick to it. I usually make it with left over cooked chicken after a roast. If you use the cornflour you'd have to syn it but it's very little - about 2 syns I think per serving.

Only thing is, it hasn't got much speed but you could have some fruit after it.

I use Knorr stock cubes.

Usually

1 onion
2 potatoes
4/5 carrots
2 handful of lentils
1l stock

Pop in the soup maker for 20 mins and it blends.

My other one is carrots, broccoli, onion, mushrooms and stock.

I love lentil as above or butternut squash soup.

onion as base, potatoes, butternut squash ( asda sell it chopped and frozen which is so much easier ) , celery or leak if you have it, some carrots and sweet potato if you like it.

There are quite a few recipies on the SW website for soups that are all good too.

I find the stock pots are much nicer however the knorr stock cubes are not bad .

Thank you all. Sounds like a change of stock might help as much as anything.

I really like lentil soup so I'm going to give that a go.

I see you're all using carrots and sweet potato a lot which I think might help me.

I'd love the receipe if you have it carrollocking. Thank you.

Chicken Mulligatawny Soup

1 Small Onion, finely chopped
2 Celery Sticks, trimmed & chopped
1 Carrot Peeled & Diced
2 tsp Mild Curry Powder
500ml Chicken Stock
100g dried basmati rice
400g can chopped tomatoes
2 large skinless chicken breasts, diced
4 Tbsp Chopped Coriander
Salt & pepper

Place the onion, celery, carrot, curry powder, stock rice & tomatoes into a large saucepan & bring to the boil.
Reduce heat to low & simmer for 30 minutes.
Add chicken & coriander & cook for a further 8-10 minutes until chicken is cooked through.

I can only compare vegetable stock because I don't eat meat, but oxo cubes are rubbish.

Look up cauliflower cheese soup on BBC web site... it's yummy.
I do think soup need to be thick or with a creamy edge or it tastes like boiled veg.
Adding laughing cow cheeses give a nice cream elliment for low syns.
