Ghanaian Jollof Rice, help!

Give me a recipe, I'll follow it and 9/10 it'll work. Not so when I tried the jollof recipe from Zoe's Ghanaian cookbook.
We got back from a big family trip to Ghana last week and I would like to make jollof rice. It was such a favourite for us all. We stayed in a few different places and each had their own variation, all delicious.

If you have a go-to jollof recipe, please share it with me, I'd love to be able to cook it properly. Thanks in advance 😋

Look for a more authentic jollof rice recipe preferably written by a Ghanaian. Be prepared to use things like Maggi cubes, which you won't find in healthy versions of the recipe (IE Zoe's), if you want an 'authentic' taste!

Ok on googling, did you mean your recipe was from Zoe's kitchen? If so please disregard my comment re seeking a Ghanaian recipe writer as I can see that that person is Ghanaian. Still think you will need the addition of Maggi cubes for it to taste 'authentic'.

Jollof rice is basically biryani / pilau in it’s essentials. If you get that it’s pretty straight forward. Use thin long grain rice. Add only just enough liquid (2 parts liquid to 1 part rice if using basmati rice), boil for a few secs, lower the heat to low, cover and it should be ready in 15-20mins for up to 1 cup of rice.

Yes it was Zoe's Ghanaian Kitchen, as you say she has Ghanaian heritage so I'm not sure what happened with the recipe!

I will try your recipe suggestion AnIndianWoman, thanks for the link 🙂

You can search on YouTube or Google for one.
I'll share what I usually do.
2 tins of plum tomatoes, 3 big bell peppers, 1 scotch bonnet, 2 medium onions. Blend then pour in 2 cooking spoons of oil. Simmer for 15mins. Season with stock, thyme, curry, white and black pepper. Rinse rice 3 times.
Pour in pot making sure the liquid covers it with about an inch or less of sauce on top.
Once boiled, leave on lowest heat to simmer. Stir 3ce.

If it helps, I recommend golden sella basmati rice for jollof.
