Where could we go for holiday in Europe that a 3 year old would enjoy. Child would most likely have just turned 3 at the time.

I am keen to go abroad as haven't been anywhere in almost 10 years now, Or are we better off staying in England? If so, where please.

To be honest they won't remember and won't care if it's fancy or not. Do what you want

What sort of budget? Apartment, hotel, mobile home? We always did Eurocamp type places when dd was little - lots of other kids, found one with toddler pool, activities laid on etc. Nice terrace to sit on when she was in bed. But others prefer AI or hotels.

If you enjoy travelling and want to visit specific places then choose wherever you would like to visit without worrying about your child, they'll adapt.
If, on the other hand you are looking for a generic Mediterranean holiday where you can spend time together as a family, with a beach, pool, and town to wander around, then there are loads of places that would do. I recommend Cyprus for the most reliable weather, best water quality and safe beaches. Italy for food and beauty of its towns. Spain for generally being really geared up for all types of tourists and having a great variety of locations. Portugal for amazing looking beach scenery. Croatia for super cute coastal towns and laid back atmosphere( pebble beaches though).

It honestly doesn’t matter to the DC where you go so long as there’s a beach, swimming pool, plenty of ice teams and maybe a bit of a minidisco in the evening (if you can stand it) pushchair to fall asleep in whilst you have dinner.

Suit yourselves whilst they are little!

Pretty much everywhere with mild weather and a family safe pool and perhaps a beach

That’s it

I'd just head for a beach. At this age we stayed in a mobile home/chalet type thing right next to a sandy beach in France. DD loved the novelty of walking into town and going to a restaurant for lunch (and being allowed a big ice cream for pudding) as we don't do this much in normal life. Then time on the beach, swimming, sandcastles etc.

The main thing a 3 year old gets out of being on holiday is quality time with you, without being in competition with your work, house work, other commitments etc.!

Your 3 year old will likely not remember anything about the holiday so - while you can!- I’d be prioritising your own needs for a holiday destination with an eye on childcare or other activities available in the resort
