STUCK IN A FOOD RUT! Ideas please for a rushed ex foodie

just had a yummy tea, so thought i would add. a recipe from the lastest sainsbury's mag

put 1 tin of green lentils, rinsed into a bowl. add tablespoon of pesto (yipee!) and mix. then add in 3 chopped spring onions, 6 tomatoes cut into 1/4's and some marinated artichokes cut into 1/4's (sell these on the deli counter). Put into a ovenproof dish and lay on top 2 fillets of skinless/boneless salmon - or any fish I guess. add pepper and drizzle of oil then stick in gas mark 6 oven for 25 mins.

Really quick, only one dish to wash and pretty healthy too!

my dh is going to be v grateful to you all for your other suggestions - he was getting a bit bored of fish finger sandwiches or ice cubes of liquidised food (if he gets really desperate!)

meggymoo love this thread-its easier than reading the new cookbooks i got for crimbo(from mum!) thanks for chicken broth rec it sounds delish defo b making that soon

lol- that your sick of pesto -i got so fed up of it i stopped buying it and now im craving it again

if you lke organic sauces try seeds of change (sure you have) espec. the sweet and sour and go organic thai sauces are very tasty theres another good organic make too but i cant remember the name
i never bother making my own sauce anymore these taste better anyway !


just thought of quick roast rec from jamie ol
lamb leg /veg i used swede leek carrot red onion-cut large chunks (he uses celariac too) /fresh herbs thyme- rosemary- bay leaves/ put in large roasting pot add 1 bottle white wine and same quan. of water/ roast on 3 for 3/4 hours (i did it on gas 4 and it was fine)

skimmed fat off sauce (freezer) then made gravy -it made me slightly tipsy -i always thought all the alcohol evaporated in cooking -i must have a very low tolerance- lol

Marinate pork or beef cubes in chillies,oil,cumin and fish sauce.
Fry up garlic,ginger, lemon grass and onions on a very low healt uintil caramelised. Add tin of coconut milk, tablespoon of brown sugar,4 or 5 tablespoons of peanut butter,excess marinade from meat (which you should now have skewered and grilled)simmer for 10 minutes and voila! Great with rice. Make up a huge batch of the satay sauce actually.Kids love it.

Had quinoa for the first time tonight with a chilli con carne I had made earlier We all loved it!

Also ribs-marinade a kg in ginger,garlic,tomato sauce (or sweet chilli sauce) soy and honey. Grill or roast. Fabulous!

windermere,forgot to add that with the satay thing, an oz or two of soy sauce is a good idea-in marinade or peanut sauce. Beefs it up and adds a bit of colour-the coconut milk can make it look very anaemic.

talking of pesto inm making this tonight(from delias fish book)
salmon with pesto crust-
season salmon with salt peppsr and lemon then
mix 1 Tblsp of pesto with fresh breadcrumbs to form paste /coat salmon fillet with half of mixture/mix some breadcrumbs wih parmesan (or pecorino) cheese and layer over pesto /then another layer of pesto mix and the top with cheese -oven bake
sure it will be yum !!

sorry not read all thread, but any ideas for packed lunches for pre schooler. Done different breads, but stuck in the filling merry go round of banana, peanut butter, ham and a rare marmite moment.

mashed avacado and mayo and tom sauce/cheese mayo spring onion ? tuna sweet corn/ chicken and pesto ? tinned salmon and cucumber

You foodies out there, already seen thread on this but still cant find a football shaped birthday cake or at least one like a pitch. (know about costco but not a member)

put some cod in a baking tray, scatter some chopped cherry toms on top, some sliced mozzarella, basil and oilve oil and bake for 20 ish minutes. really lovely

another easy and lovely one (jamie again): fry some chicken joints in a casserole in butter and olive oil til browned, drain away excess oil, add half a cinammon stick, some fresh sage, zest of 1 or 2 lemons - in nice thick slices - a load of whole garlic cloves with their skin on, then add a load of milk - mostly cover the chicken but leave a bit sticking out, leave some of the lemon scattered on the top of the chicken, then cover and put the whole lot in the oven. takes 40 min to an hour. The original recipe is for a whole chicken but we do it with joints
