Potatoes freezing & stopping them going green and hairy

Morning all
does anyone have advice for this? Doesn’t seem to matter where I store them, green and hairy is the order of the day. I’m about to make some mash to freeze. Has anyone had success with home made frozen chips or baked potatoes?
Potatoes are one thing we seem to waste a lot.
would it be enough to blanch them quickly then what? Fridge? But the fridge is small.

I'll be watching this.
I store mine in a blackout bag, in a cool dark larder, well away from onions.
But still they sprout ! I'll remove small sprouts, but I end up throwing some away

Potatoes need darkness or they will go green. The fridge really slows down sprouting. But I can only recommend buying what you need and not storing them if you have problems with this. I don’t find it a problem but then we eat potatoes regularly so they never get the chance to do much sprouting.

I freeze mash and wedges, I don't bother blanching the wedges, I just kind of put them in a plastic bag with a little oil and massage them around to cover them, they don't keep that long though in good condition in freezer, inclined to gather ice. If you want actual chips for deep frying then I would blanch them. Never tried a baked potato frozen as I don't usually eat them but as you can buy frozen ones there is no reason it wouldn't work.

In general potatoes are not meant to be kept in the fridge. Cool dark place but still if there too long they will sprout.

Paper bag, dark place. We used to buy them in huge paper sacks and keep in the pantry for a couple of months. a garage would do too.

you can just rub small sprouts off.

I’m quite happy to rub off small sprouts, and peel off a bit of green, but this is beyond. It doesn’t seem to matter where I store them or how dark it is.

I made chips the other day & froze a few (cooked) to see and that seemed to go okay. Whether it’s cheaper than bought frozen chips I’m not sure but possibly healthier.

I only buy four at a time. I do have room in my fridge though.

you can make a batch of mash and it freezes well.

I cook mash with potatoes that need using up. I add fried onion and cheese to give it a bit more flavour.
jacket potatoes freezer if you do the scoop out and re stuff method with fillings such as broccoli and cheese

We prepare our potatoes as wedges, chips and roast potatoes and freeze then, when we are organised.
Parboil them for about 5mins (I think!) then drain, coat in oil, open freeze on a tray for a couple of hours then into freezer bags. The instructions are in Justine Pattisons book, Freeze, which also has a lovely recipe for cheesy mash to freeze and I'm sure she says jacket potatos can be cooked and frozen, but never tried that.
The frozen potatoes can be cooked from frozen for about half hour, roasted ones about 45-60mins. We do vary type of oil/dripping add salt/paprika etc and all come out fine so far. Did try throwing a few in actifty too and were fine.

Oh I’ve not heard of that book, I will have a look thanks :)
it may be that buying small amounts is the way forward, I’m trying to reduce going to the shops for top ups. Perhaps I need to divide the shop into two or something.

The Freeze book has loads of lovely recipes in, I'd definitely recommend it.
