Biryani like Eddie's

Does anyone have a recipe for chicken biryani the way Eddie made it in the masterchef final? Basically marinated chicken thighs underneath cooked rice then cooked in the oven. I want to try it but can't find any recipes. Thanks

My favourite is this

It is similar to what you describe but doesn’t get cooked in the oven. Hope you give this a go. It’s yummy!

That looks exactly the thing, apart from cooked on hob instead of oven. Thanks so much. And I have all the ingredients in the cupboard (except saffron - might have to ditch that). Saturdays dinner 😋

Thanks for this, that's tomorrow's meal sorted out! Planning to have it with all her suggested accompaniments - tomato and mint salad, cabbage salad, naan, as by a fortunate chance I've got all the necessary stuff in already and was wondering what to do to use up the mint.

It worked brilliantly here. Chicken really tender and cooked perfectly. I did get some saffron in the end and it looked beautiful but we decided that actually we're not completely overwhelmed by the taste of saffron so I'll cut that right down next time. Thanks again. Definitely one to add to the repertoire.

PS If the chicken one goes well, I'll definitely have a go at the vegetable biriani next. That sounds good too.

Worked well! I had the leftovers for lunch earlier. I agree about the saffron. It's eyewateringly expensive and I couldn't really taste it in the finished product, although it was visually appealing to have the yellow streaks across the rice.
