How to make a nice mac n cheese?

I can make a simple white sauce mixed with grated cheese but it just never has the wow factor.

Anyone have a good but simple mac n cheese recipe?

The best I ever made has no flour

You boil the macaroni in a small amount of water, when it’s partially cooked add some milk and boil, the starch from the pasta thickens the sauce. Then add seasoning, various cheeses and a bit of mustard.

Ditch the béchamel and get a hold of some sodium citrate. My problem with white sauce based cheese sauce is that the taste of the cheese is diluted, and adding more cheese tends to make the sauce gritty and greasy. Sodium citrate stabilises the melted cheese without dulling the taste, giving you a more cheesy tasting macaroni cheese.

Here is a very good recipe for sodium citrate based mac and cheese.

Full fat milk and double cream in the white sauce. Use strong cheddar.

Yes to the English mustard and also nutmeg makes a big difference, ditto salt and pepper.
