Vegetarian Pasta Sauce ideas please.

This is my current repertoire

Tomato and lentil
Tomato and Quorn bolognese

Both of theses can have carrot, courgette, onions, mushrooms, peppers added depending what’s in the fridge. I will also use it for lasagne.

Cheese sauce- home made.

Pesto ( from a jar!)

Any suggestions on some additions to my list please?

Wouldn't it be lovely to just have some recipe ideas, without all this discussion about cheese? I'm sure people are capable of deciding if they want to/don't want to eat certain cheeses.

Assuming parmesan is ok

Cut 2 courgettes into thin matchsticks, saute in butter until soft, add rind and juice of a lemon, handful if parmesan. Add to cooked linguine. Delicious.

Pasta and marmite sauce is the best dish ever. Not sure about Nigella's version but I boil the pasta, drain, reserve a bit of the water to mix in the pasta. Big tablespoon of butter and marmite to taste. Mix it all together and sprinkle with cheese. My guilty pleasure!

Another good courgette one is based on a Carluccio's one -
lots of butter
onion finely chopped
diced courgettes
loads of red chilli
Don't cook it for too long, as you want the courgettes to still have a bit of crunch to them.
Loads of Parmesan or something of that ilk on top.
One of the only edible things to do with a courgette.

As PP have suggested, frying cherry toms in onions, garlic and olive oil and then squishing the juice out after they go soft makes an amazing, unctuous (to use a wanky cheffy phrase) sauce that you can add lots of nice things to. I like to throw in spinach leaves, olives and capers and then bung in the hot pasta, a bit of the cooking water and stir through. Top with lots of cheese, obv.

Another really easy one is to grate a courgette and fry in olive oil, add lemon juice and loads of black pepper, some chilli flakes, and grated parmesan/cheese of choice.

Trying to think of a suitable replacement for bacon or pancetta for a good veggie carbonara. I tried it with mushrooms once and it was ok but they lack the crispy saltiness you need.

(I noticed on another thread that lots of people thought that capers were fish, they are flower buds.)

I notice that a few of these ideas seem fairly dry. I’d need more liquid with some.
I like my pasta with at least a bit of coating. I don’t like a pile of spaghetti with a pile of sauce in the middle. I like to stir my sauces through.

Walnut sauce stems interesting. Have never heard of it.
I know capers are vegetarian but I’m not a fan. Even my chickens wouldn’t eat them!

The cavolo Nero sauce I linked to it definitely not dry - it’s got a shitload of extra virgin olive oil in it. When you stir it through the spaghetti everything goes a beautiful deep green.

to make things more saucy keep a cup of the pasta water back when draining.this contains the starch that thicken the sauce.so pour it back in when mixing in other ingredients and it will both sauce it and cause the stuff to meld together better.

If the sauce seems too dry, just add a splash of wine, knob of butter, spoon of cream, dash of olive oil, spoon of cream cheese....

We made a great one tonight. In a food processor put a pack of soft silky tofu, 2 roasted red peppers, 1tsp chilli flakes and 4 cloves of crushed garlic. Warm through and mix with a combination of pasta and courgette ribbons and a sprinkle of basil. Filling and tasty.

Homemade vegan "parmesan"
1 cup unsalted cashew nuts
4 or 5 tablespoons brewer's yeast or nutritional yeast
1 teaspoon powdered garlic
1 teaspoon sea salt
Blend ingredients in a food processer until nuts are powdered.
Almonds can be used in place of the cashews but the cashew gives a more authentic taste.

I haven't heard of Meridian, usually get Scala unless I can be bothered making my own.

You can get Meridian in supermarkets or H&B. I find it's often cheaper if you buy it in a b1g1hp offer in H&B.

I only use about half the butter, though, and it is still delicious!

BTW, it isn't dry (it appears drier in the pics than it it is to eat) - it has a coating of a light mushroomy sauce throughout.
