Does anyone have a recipe for an amazing gluten free cake?

I want to make a cake for a friends birthday and she is gluten intolerant. I am not the best baker in the world so nothing too complicated but I can just about do a cake - had a look online but would like some recommendations really :)

I have made it a few times and it is delicious. I would pick an olive oil that does not taste too strongly -- no extra virgin.

Go with Nigella's chocolate olive oil. You can't go wrong with it! Avoids gluten free flour too which makes it nicer.

Another vote for the clementine cake here. I am not a baker but I've managed this a few times and it's delicious. I melted some dark chocolate and drizzled it over the top when it was cool and it looked really lovely.

I was going to suggest a lemon polenta cake which is made with almonds and polenta in the place of flour, but others have already suggested it. One thing to be careful about is making sure the baking powder is also gluten free. I once booked the lemon polenta cake for a friend's Macmillan coffee morning so there was a gluten-free option, then realised at the end there was flour in the baking powder I've used. Dr Oetker brand does a gluten free baking powder, either in individual sachets or a pot.

I love this recipe it's Coconut Flour Banana Bread. I do not need to eat Gluten Free recipes, but this is such a wonderful moist cake and so easy. You literally just chuck everything into a bowl and then bake. My DD(3) loves this recipe as well.

This is also a great recipe for peanut butter banana muffins. I left out the sugar completely and they were plenty sweet. I make them because they are less than 200 calories each and eat them for breakfast!

I am a serial gluten free baking failure, so this was a serious victory for me.
If not vegan you can use eggs instead of flax eggs.
