Tasty veggie meals that can be frozen?

We are in a real rut and eating lots of ready meals so want to get organised!

How about a nice tomato sauce with red onions, yellow peppers, carrots and green beans, parsely, chilli and lemon. Serve with quinoa.

Make a big pan of veggie bolognese with green lentils (lots of recipes online, but basically it's the same as making a meat one). Can be used on its own as a pasta sauce, in a lasagne, thinned out with chopped toms and more veg with dumplings as a stew, even turned into a soup with stock and pasta/beans/whatever added! Freezes wonderfully.

Soup! All kinds of options there.

Chilli! Have with rice, or make burritos with wraps and toppings.
