Cheap meals without much gluten?

Gluten seems to aggravate my IBS so I'm trying to cut down. However, I'm on an extremely low budget for my weekly shop.

Any suggestions for cheap meals? Dd16 is veggie, tends to eat a lot of quorn products. Dp and I have meat and veg or similar.

Meals I regularly cook are

Shepherds pie
Mince with rice
Chicken goujons with sweet and sour sauce and rice
Jacket potatoes with tuna and salad
Chicken casserole
Sausages and mash

It just seems a lot of cheap meals involve pasta which we both don't eat, although dd will.

Any suggestions welcome ... more mince meals for example? Or chicken ... I don't like cold chicken but would be happy to cook a roast chicken and use the remaining meat in other meals on two further days, but struggle with what to cook - dp doesn't like curry or spicy food.

The gluten free pastas and sausages are really good these days, you could just do a straight swap?

Coeliac and Crohn's DP refuses to eat most processed gluten free foods but he doesn't mind the pasta or sausages.

Regular meals here are:

Stir frys with rice noodles
Gluten free sausages and mash
Gluten free lasagne (I just swap to GF pasta sheets and make a cheese sauce with GF flour)
Meat potatoes and veg
Paella/ risotto

Yes we get gf sausages, they're fine!

Potatoes are good too. Any other casseroles with potato and mince or chicken?

stirfry - generally anything that I have left over.

The other night it was left over roast pork (although its usually chicken) with some odds and ends of broccoli, baby corn, a sliced red onion and some mushrooms.

For the sauce I usually have a bottle of sweet chilli dipping sauce in the cupboard so some of that goes in, a squeeze of lemon and some crushed garlic and ginger ( I keep pouches of both in the freezer, they are awesome!)

The other thing I do with left over roast chicken is make it into sort of a chicken pie put with a sliced potato topping instead of pastry.

Strip any left over bits of chicken, boil the carcass for about an hour for stock. Fry the chicken and some bacon/ mushrooms and leeks together with some garlic and then add the chicken stock on. Thicken with cornflour and season with salt and pepper. Put into a casserole dish and put thinly sliced potatoes over the top. Cook in the oven until the potatoes look cooked.

I also use any left over stock/ chicken etc for risotto. I see risotto as another 'using up scraps' type dish.

Omelettes with salad are relatively cheap and very filling.

You could make a mild chilli con carne with plenty of rice

Have you looked on the A Girl Called Jack website? Lots of cheap meal ideas on there, many are GF naturally.

kidney bean burgers with rice and a bit of grated cheese

chick pea curry and rice

sushi is popular with my lot - cucumber or grilled red pepper, or tamago which is sweet omelette. it's relatively cheap and gluten free.

we had refried beans last night with rice.

Chili con carne (serve with rice)
Moroccan lamb (again serve with rice, or with flat reads made with gf flour- there's an awesome thread on here about how to make them)
Burritos served with gf wraps (we get some called Mexicana street market white corn tortillas by old el paso, they're about £1.80 from Sainsburys, anyone who can eat wheat can have normal wraps which a cheaper!)
I always cook double and freeze half to make meals quicker in the week.

Oh, and I add lots of lentils to bulk out mince etc. The burritos are lentil and beans, so no meat, which is cheaper.
The doves farm gf flour- is pretty decent, and I use it in cheese sauces/rouxs etc.

I can't eat lentils and kidney beans due to IBS. I imagine I could use mince instead though? Dd could make them with beans.

How do you make burritos?
