Thanks to the thread asking for cheap snacks I've had the idea of listing recipes for them on here. Probably been done before though?

Mine is the potato fritters

Makes 2 decent sized.

1 baking potato or any medium sized. 1 egg. 1 spring onion or veg of choice (mushrooms/peppers etc..) seasoning. Herbs of choice. I use corriander or parsley.

Grate potato. Put grated potato in the middle of a teatowel then squeeze out the excess moisture. Put potato back on a dish. Add finely chopped veg, herbs, beaten egg and seasoning, mix well. Heat up frying pan. Fry in a little oil or no oil. Cook to desired size, this makes 2 for me but could make 4 small or 1 very large. Eat as a snack or a side dish.

Rice salad - just for Gwynneth lets use brown rice -

So, cooked rice, cooled, with added chopped-up tomato, cucumber, various chopped left overs (anything from grapes to grated carrot), topped with any kind of dressing.

Nice served in small pots/bowls.

That's good to know. To be fair, I couldn't see an appreciable difference with the proving, I assumed it was due to my house being cold.
That'll save an hour anywayGrin.

I make flatbreads and chapatis but never prove them. Dcs love them with anything to be honest. It's so easy to make them like you say.

Chappati are cheap and easy to make:
Wholemeal flour and water mixed to a dough. Knead for 10 mins and leave an hour to prove.
Split into golf ball sized balls and roll flat. Bake or dry fry them until they puff up, eat warm if possible (yummySmile). Not that quick, but if you have two ten-minute slots an hour apart, it's not taxing.

One of the cheapest snacks we do (me and ds2) is a bag of bread mix made up then split in 3 or 4 bits, rolled out into pizzas and spread with passata and herbs, cheese and any other toppings. Not so much a quick snack as you have to heat the oven but very lush and so cheap. I buy a bag of bread mix for 80 to 90p, passata is 27pish and the mozzarella is 44p from Morrisons. Then add ham or whatever. DS1 likes ham and pineapple. DS2 has cheddar on. Dp and I have anything with chillis on.

Tinned tomatoes, garlic and pasta is a good cheap snack.

Cheap snacks are generally not low-carb. Protein is expensive. I think of snacks as a carby thing anyway (though I'm not averse to a handful of pecan nuts of an afternoon).
I doubt the purpose of this thread is to find low carb cheap snacks, that would be a weightloss thread.

Those fritters are my sort of food mmmmmmm. Apple goes well with cheese. I often have it as a snack with some crackers. Or grapes.

Sunshine fritters

Make up some thick batter - the kind for drop scones.
Add a (drained) tin of sweetcorn and a grated carrot.

Chop and fry an onion and/or garlic and cumin. Stir this into batter and veg, then fry, about a small ladle full at a time.

Kids eat these dipped into ketchup; I like it with yoghurtyy dip.

You can also add a grated courgette, in which case they become "traffic light fritters"'.Wink

Don't laugh, but cheese and apple on toast is yum. Or as a toasted sandwich.

loaded potato skins....its a nigella recipe but is yummy.

bake potatoes
scoop out the insides into a bowl
add sour cream, spring onions, a nice mature cheese, salt, pepper, worcester sauce,
mix it all together, shove it back into the potato skins, top with cheese and bung back in oven for 20 mins or so.

you can fry bacon till crispy and crumble it over the top when they come out of oven.

cheap as chips, but very tasty! we sometimes have this for tea! (never mind as a snack!)
