Easy dinner ideas

Going camping for about a week, will have limited fridge space and a decent size two ring hob.
All quick and easy dinner ideas are most welcome!

When I used to go camping it was spag bol, chili, curry, eggy bread, fry ups, tinned beans & sausages. A BBQ is useful but best of all is take-away or eating out! Have fun and don't forget to pack the wine!

Take some frozen chilli with you for day 1 or two. Then one pan meals like risotto, stir fry are great.

My DC are apparently traumatised from frying potatoes and baked beans with sausages...
New potatoes, salad and whatever meat / fish you want to fry for a more elaborate dinner.

We always take a chilli too. Those tortilla chips that they sell in Lidl make a very easy accompanimentwith wine of course

We always take a chilli, bolognese or sausage casserole frozen to reheat on day 1 or 2.

Cooking whilst there, risotto or orzo, corned beef hash, sausage and mash. Bbq is always a winner too. And we have to get a take away one night too.

gnocchi. Veggie chilli and boil in the bag rice is useful. Stir fry or ramen.

At Scout camp we make these meals on alter fires so you should manage them on a 2 ring hob

Spag Bol
Chicken curry and rice
Fajitas
Chicken nuggets in wraps with chili sauce
Burgers and beans

Plus bacon, sausages, eggy bread breakfasts

We tend to just take things that can go in wraps or buns because no one wants to wash pans.

I have a George Foreman electric bbq which we use a lot for bacon etc.

Sheer laziness but I take throwaway bbqs also for when I cba cleaning the George Foreman.

Sometimes I make instant noodles and grill meat and veg to add to them on the bbq which are nice

You got your tinned curries, chillies, even stewed steak, tagines. Pair with microwave rice (you can also cook them in pans in a few minutes), smash, cous cous, shelf stable gnocchi or fresh pasta. Hot dogs. Pasta and pesto, possibly jazzed up with the likes of olives, sundried tomatoes, cherry tomatoes.

We had a week or so camping post-covid, a long way from a decent shop, cafes and restaurants were still shut in the area so we took enough tins and stuff for the whole week.

We tend to bring spaghetti bol/meatballs/curry etc. On short trips we bring fresh, but if we are not eating it quickly, I will bring frozen. Or bring sauce frozen, so I can just sear chicken, mince etc and chuck sauce on. Especially with prawn things that do not reheat.

We usually bbq and I will usually have pre prepped salad/pasta salad with me, or buy bags once away.

Last time, I brought my ninja and slow cooked a chicken while out. Got home, rested chicken, airfried chips, knocked up a salad. Game changer.

It is coming this year. Planning to bake potatoes and slow cook allsorts!

macaroni cheese. cook pasta. drain. add evaporated milk and grated cheese plus seasoning if you like. that's the basic meal but you can add tinned veg, chopped hotdog sausages etc too.

Hot dogs from a tin on buns
You can buy ready cooked Pasta in a bag and sauce in a different bag just required a little warming so quick, kids did this for D of E.

I avoid any make from scratch dishes that require long cooking (incl risotto) because it uses so much of your gas. But maybe you have EHU?

Burritos: packets of tortilla keep well. Ouch if re-fried beans and or sachet of ‘Mexican rice’ and tin of chilli. I take bags of ready grated cheese.

Use the tortillas also as quesadillas dry fried in your frying pan. Cheese, the leftover re-fried beans,tuna, spoonful of pasta sauce, whatever you fancy.
