Help need milk and egg free cake recipe

Its my little ones 1st birthday coming up soon and need an egg milk and soya free birtday cake recipes. Im hoping someones been in the same situation.

any help greatfully recieved

Hi, I have one here. Hope it is what you are looking for.

225g/ 8oz SR wholemeal flour
2 tsp baking powder
175g/ 6oz caster sugar
6 tbsp sunflower oil
250 mls/ 9 fl oz water
1 tsp vanilla extract
4 tbsp strawberry/ raspberry jam
caster sugar for dusting

  1. Grease two 20cm/ 8 inch sandwich cake tins and line them with baking parchment.
  2. Sieve the flour and baking powder into a large mixing bowl, stirring in any bran remaining in the sieve. Stir in the sugar.
  3. Pour in the sunflower oil and vanilla extract and mix well witha wooden spoon for about 1 minute until the cake mixture is smooth.
  4. Divide the mixture between the prepared tins.
  5. Bake in a preheated oven 180 degrees/ 350 f/ Gas mark 4, for about 25-30 mins until th centre springs back when lightly touched. Leave to cool in the tin before turning out on to a wire rack.
  6. When cool, sandwich with jam and dust the top with caster sugar.

Boiled Chocolate Cake

1 cup water
1 1/2 cup caster sugar
4 oz dairy free butter/margarine
2 tablespoons cocoa
1 1/2 cups Self Raising flour
1/2 teaspoon baking soda
2 eggs*

In replace of eggs you can use equivalent of Orgran NO Egg Natural Egg Replacer/ or one whole pureed banana/ or 1 cup of apple puree.

Place sugar, water, butter, cocoa and baking soda on low heat until melts - then simmer for a few minutes. Let cool. When cool mix in egg replacement and flour. Turn into 7 inch round cake tin (greased or baking paper). Bake at 180 degree celcius for approx 45 mins depending on oven.

This is a lovely cake as it is really moist because of the method of cooking. I cooked this for my ds2's 1st birthday but I had to replace wheat flour with soya flour and it turned out lovely. I iced with green butter icing (dairy-free) and placed lollipops all over (I had seen Martha Stewart do similar). I have cooked this cake with all 3 egg alternatives and it has turned out fine.

Instead of eggs, try using 1 tbsp of ground linseed, mixed with 3 tbsp water. Leave for a few minutes until it turns all gloopy, then use as you would 1 egg. It sounds odd but works brilliantly. I think you can easily find a dairy free cake recipe, or just use oat / rice milk or sunflower margarine in place of the dairy parts.

Thanks everyone i will try both recipes and see which turns out best. Im not the greatest cake maker in the world. Were do you get egg replacement stuff from??? may post that seperately.

Its great i knew mumsnetter would help. will let you know how they turn out.

I have also heard of using custard powder instead of egg. I think it is 1 tbls but I will check it out.
