What are your go to recipes?

Mine are Jamie olivers pancakes
One cup flour
One cup milk
One egg

Also 3, 2,1 method flapjacks for packed lunches etc

300g oats
200g marg
100g brown sugar and few tablespoons oh honey

Melt marg add sugar then honey
and oats Bake for 45 mins

These two recipes are so easy to remember and I make them weekly. What are your go to recipes? Sweet or savoury. Or cooking tips. Would love some more

@imp2007 my kids also loved the baked bean chilli despite their initial moans when I said it was chilli. I added a dash of Worcestershire sauce and a bit of tomato purée. Thank you!

5p pasta, easiest dinner ever. Consists of pancetta, pasta, parmesan, pesto, peas (and sometimes Philadelphia soft cheese)

Fry up the pancetta until golden and a bit crispy, cook the pasta in a saucepan, chuck the peas in for last 4 minutes of pasta cooking time, drain pasta and peas and add fried pancetta, pesto (and Philadelphia if using), and loads of grated parmesan. Hey pesto presto! 😋

I've got a couple of chicken breasts to use up tomorrow so am going to try @EmmaGrundyForPM sticky chicken recipe!!!! Think that will go down well!!!

Lunch the day after Mexican night is usually the leftover chilli/ bean mixture spread on a wrap with cheese and sweetcorn, maybe chopped pepper/tomato and them dry fried with another on top to make a sandwich (is this enchilada?) And flipped over,toasted a bit more. Usually plain cheese and sweetcorn for the kids. Then cut into triangls with scissors and served with tinned tomato soup.
Makes a change from cheese on toast/toasties.

Easy Mexican night.

Defrost portion of chilli from batch cooking.

Put brown rice in to cook.

Make some sort of limey salsa - finely chopped tomatoes, onions, s and p, lime juice. Can add peppers, cucumbers, depends what you have.

Grate some cheese, put in bowl

Put tinned sweetcorn in bowl

Put tinned refried beans in bowl

Microwave beef, corn, beans

Toast packet of wraps put in all on table with bag of salad every one digs in loves it. V messy but nice

Easy Japanese night

I put a whole box of sushi rice into instant pot, no longer bother with any rinsing at all it doesn't seem to matter (sacrilege I realise!) Standard rice setting. Splosh of mirin and brown rice vinegar, I buy giant bottles of these, but a tiny bit lemon juice and squirt if runny honey/agave works too. Or have it plain.
I Always cook extra as I like the leftovers next day for lunch with an omelette and salad.

Serve with a packet of hot smoked trout or salmon, or sometime s Tuna mayo. Sounds v inauthentic but I've actually been to Japan and there's tuna mayo everywhere.
Veg is roasted broccoli / kale/ green beans -soneyhibg with crunch with a splash of sesame oil and maybe sesame seeds put on at the end. If you have any jars of pickles or saurkraut have done in the side.
Serve with tamari/ soy on table.

Space op for any flapjacks you can modify so easily. Just think of the butter and sugar as glue.
What I tend to do is melt in biggest glass bowl in the microwave 1/2 block of butter with similar quantity of sugar and syrup. And I swap these up depending on what's in the cupboard, how much sugary crap I or kids have been eating with any combination ofpeanut butter, agave, rice malt syrup, date syrup
Once melted into delicious gloop stir in a couple if handfuls of dried frui/nuts. Occasionally a grated apple or mashed banana but then it won't keep v long. Often if I have museli/ other cereal that been hanging around that goes in.
Then keep adding oats until there's not enough gloop left to coat it.
Squash into tray and cook until golden. Yummy

This Slimming World version of Satay Chicken:

4 chopped chicken breasts
1 diced onion
1 tsp chilli flakes (or more if you like it hot)
1 tsp curry powder
1 tsp lemon juice
1/2 tsp of crushed garlic
Pinch of black pepper
2 tbsp skimmed milk
2 tbsp soy sauce
250ml passata
3 tbsp peanut butter

I've no idea what syns it is or whatever I just tried it at my sisters house and loved it! It's just like satay but without the calorie content/fat of the coconut milk.

I find it works best if chucked in a slow cooker, just brown the onions and garlic off gently first. It always looks like it's going to be far too tomato-ey but once it's cooked out for hours it's lovely. I prefer it with chunky peanut butter but you could use smooth.

Serve with rice and veg (we use brown but white would work fine)

@Redact So pleased you enjoyed it! It is meant to be cooked with a shallot... Not sure how I managed to miss that out! It's one of our absolute favourite meals.

@Woodlandbelle if i wanted to add nuts/dried fruit, would I replace some of the oats? I have been desperate for a good flapjack recipe but really like mine to have a little bit of fruit and nuts in.

Ginger chicken and sweet potato stew. Chop sweet pots into cm cubes and roast on 200° of 25 mins. Cook the chicken then stir in half a tsp of garlic, 2 of ginger and a small amount of chilli and 2 table spoons of tomato puree. Cook for 2 mins then add 200ml coconut milk, 100ml of water and a chicken stock. When the sauce is thickened add in a bag of spinach a handful at a time until it's all wilted. Then take off the heat and add in teh sweet pots, the juice from half a lime and a glug of soy. Absolutely delicious.

Made this last night, added in an onion and some garlic cloves that needed using up, didn't have spinach so substituted for rocket and it was delicious! Everyone loved it, Thank you Sosig, will definitely make again.

My go to recipe is barefoot contessa weeknight bolognese. So easy, quick and delicious.

My kids love a really simple baked bean chilli

Fry off a pack of beef mince (can also use onions but mine don't like them!)
Add some garlic towards the end
Add mild chilli powder to taste I use a teaspoon
add an oxo cube dissolved in a small amount of water
Add in two tins of baked beans and simmer for 20 mins or so
Sometimes add a ton of sweet corn and extra water as it's simmering if you need to.

Mine eat this without fail can serve with rice, tortillas or in a wrap .

Chorizo pasta sauce. Chop & saute 1 onion and 1 pepper for a few minutes. Chop half a chorizo sausage (so around 100g or more if you want it - the Tesco ones are around 200g I think) and add to the pan. Saute a couple more mins. Add 1 can chopped toms, salt, pepper, a tsp of paprika if you have it. Simmer with lid on for 30 mins. Add some cream to taste (around half a small carton) and then mix through cooked pasta.

It also works as a stew with more pepper, use the whole chorizo, add 1 can of whatever beans you have (cannelini is good) & around 500mls chicken stock. Simmer with lid off this time, skip the cream and serve with rice.

Formerbabe we do that with chicken nuggets or breaded cutlets for a super cheat chicken parmigiana, much less healthy than yours Blush

Destiny I do the same but instead of rolling up and adding the salsa on top, I keep it flat, layer another tortilla on top, bake or fry it as a quesadilla, cut into wedges and dip in the salsa, guac and sour cream also nice too!

This is easy and delicious.

Put sweet corn, chopped onions and peppers and black beans in a bowl ( could also add cooked chicken etc). Add chilli powder and cumin. Place on a tortilla, wrap it then cover with salsa from a jar and grated cheese. Cook in over for half an hour.

Greens and sausage skillet - the best way I know to eat greens!

Chop sausages into chunks
Really brown them with olive oil, garlic, sliced onions - add fennel seeds and chili flakes to taste if you have them
You can add a splash of white wine or water and scrape all the brown sticky bits off the pan
Add a mountain of chopped raw greens - I use 500g kale for a pound of Cumberland sausages
Cover with lid to let it wilt down
Toss in porky, garlicky, winey juices
Eat with garlic baguette!

Another sausage one - with red cabbage this time, not greens:

Fry a whole head of red cabbage, finely sliced, with 100ml olive oil and 4 cloves chopped garlic about 20 mins until tender but not yet soft - it will have reduced a lot in volume in case you thought you'd be eating red cabbage for days!!
Add 10 pork sausages you've browned well in a frying pan, more salt and pepper
Cook sausages and cabbage together 20 mins and eat with bread.

And finally chicken with 2 lemons:

Whole chicken, season with salt and pepper
Stab two lemons all over with a fork, roll them back and forth on the counter, stuff into the chicken, close the cavity with cocktail sticks and loosely tie the legs with twine or the elastic that came with the chicken
Roast breast-side down for 30 mins (no fat or oil needed) at 160c fan, then turn over for the rest of the time (usually about an hour).

This is delicious, few ingredients and so easy

Lay whole chicken breasts in an oven dish.
Pour over a jar of good quality tomato based pasta sauce, and a little water...I like the lidl siciliana sauce.
Cover with foil and bake in oven for an hour...you might need to add an extra splash of water during cooking to stop the sauce drying out.
Once cooked, remove foil, top with a sliced ball of mozzarella and grated parmesan...put back in oven for ten mins to melt.

Serve with pasta

For an easy chicken and mushroom pie, I simmer chopped mushrooms and cooked chicken for a few minutes in a tin of Cambells condensed mushroom soup. Leave to cool, then cover with puff pastry and cook in oven. Yum!

I thicken my Spanish Chicken with McDougalls Thickening granules (so handy- just sprinkle on and stir). You could use cornflour if you wanted to but it needs to cook a bit afterwards.
