Organ donor register

So the organ donor register asked for my gender, but not my sex.
Surely knowing the biological sex of my donated organs makes more of a difference than my gender, which can change from day to day apparently?!

Also, it asks if I want to donate 'tissue'.
Does that include everything else not named on the list? I went on there to request that my uterus, ovaries etc are not used for donation.
