There isn't really one recipe, you can chuck in whatever you like as long as don't use anything like potatoes, sweetcorn, parsnips or peas which have points.

Eg. onion, carrot, celery, courgette, tin of toms, stock cube & basil.

bung it all in - any veg, stock cube. ~You can blend it smooth or keep it chunky.

blend it after it has cooked til veg soft

I also make a yummy soup with only 3 points - more filling than just veg. (it's a bit like minestrone.)

Finely chop 2 lean rashers of bacon - take all fat off. Dry fry to brown it a bit. (1 point)

Add veg - I use onion, carrot, red pepper, broccoli chopped into very small bits - and a stock cube in water and boil up until veg soft.
You can also add a squirt of tomato puree.

Add 2oz of dried tiny pasta shapes, or spaghetti broken into small bits, and cook until pasta soft. (2 points for the pasta.)

Eat. (Do not blend - this is a lumpy soup!)

esp if you can't even fry the onions

You can use the 1 cal spray oil stuff to fry a little.

i have to give you the zero point veg casserole recipe cos its so yummy

8oz carrots sliced
12oz turnip diced
4 celery sticks sliced
1 red onion chopped
2 garlic cloves crushed
6oz green beans halved
12oz cauliflower broken up
1 teaspn paprika
i teaspn ground coriander
10 fl oz veg stock
400 can tomatoes with herbs
s&p

put carrots turnip celery red onion garlic green beans and cauli in large pot
sprinkle over paprika and coriander stir the veg to coat them evenly in the spiced
add stock and stir in tinned toms
season
bring pan to boil
reduce heat , cover and simmer for 30 mins til veg are tender
remove cover, turn up heat adn allow mixture to bubble vigorously for 5 mins to reduce the liquid
serve
TIP
the cauli will break down a lot after 30 mns cooking and helps thicken the casserole
if yo uprefer cauli with a bit more bite add it to the pot for the last 15mins of cooking time
