Please help me find easy and quick to prepare work lunches

I have spent the winter eating pre-prepared soup for lunch. I like the Yorkshire Provider ones and I usually spend £2 a day on a pot. They are so convenient as they will last a week in the fridge, are filled with veg and pulses, contain about 370- ish and keep me full until tea.

I would prefer to make my own but I never have the time. They are also good as DH has the same with a cheese sandwich.

Now the spring is coming I am getting a bit fed up with soup and I am struggling to find an alternative that isn't going to take me time to prepare and will be sufficient (with easy extras) for DH as well.

What does everyone else do for work lunches?

I am going to chop tomato, cucumber, onion, radish as my main base. Then add to it each week with salad leaves or tinned green lentils or gourmet lentils and a little crumbles feta, toasted pitta chopped and some sumac sprinkled over and lemon juice. Add some parsley or fresh coriander.

I plan to keep it all in the fridge and ensemble the final salad as I make supper.

I do a batch of pasta with veggies and tomato based sauce at the beginning of the week, separate into 5 portions and freeze. Then in the morning I can grab one out the freezer, defrosted by lunch time and ready to eat (hot or cold).

Justaweeone the mason salads look great and the type of prep I like, I would make them all on a Saturday night and then they are ready each morning for me to grab - thanks Grin
