can I make rice pudding without sugar?

or will that be gross? I thought I might make some rice pudding for ds and freeze it, but all the recipes I've found have sugar. Or am I being too precious and a little bit of sugar won't kill him?

yes, it is very nice with raisins, or vanilla, or banana to sweeten it

Milk has a sweetness of its own - so try it without. If DS is very little and not used to sugary stuff then he won't know the difference.

You could always add a fruit/puree to it to make it more interesting - pear/apple/banana?

Agree with Franny.

Even if you do opt for using sugar never put as much as they recommend on the ingredients anyway or it will be far too sweet. I use half the amount or less

Great idea HeadFairy - can you post your recipe for Rice Pudding please?

One of my DTs is allergic to dairy so am always looking for recipes that can be adapted to avoid dairy and as I am assuming that milk is the only dairy item in this - in theory I could use rice milk instead?

thanks everyone, I just wondered if it would be too bland, but milk has quite a lot of it's own sugar. The recipe I was using dairymoo is just off the side of the packet of rice: 2oz pudding rice, 2 tblsp sugar (which I'll leave out) and 1 pint of milk, put it all together in a buttered ovenproof dish and pop in the oven at 170degrees c for 2 hours. I might add a bit of cream in for extra richness as it's for ds. Maybe even a bit of nutmeg and cinnamon.

Ok - rice pudding made with coconut milk in the oven...now when it's finished do you just freeze it in individual portions? Do you have to take care in cooling it like you do with normal rice? Sorry, probably stupid q's but you never know!

Just treat like you would normally.. it does take a while to cool and is a little more stodgy than cows milk so you may need to add more liquid half way through cooking. Its delicious!!

I've never used sugar in dd's - milk and rice only. Have you tried making it with flaked rice (get it from bigger versions of Saino's, Tesco, etc)? You can make pudding in under 10 minutes in a pan on the hob. A life saver when in a hurry.

mmmmm, I made some rice pudding today, used a mixture of coconut milk and normal milk as i only had a tiny tin of coconut milk. Pretty damn tasty, shame ds didn't eat any of it. He's been off his food all day so I didnt' take it personally, esp as I polished it off!
