Hairspray, mousse or something else?

I wear my hair up a lot but I end up with lots of flyaway sections - not the wispy flattering kind but more like chunks. They seem to have spring out of nowhere since having DCs...

What sort of hair product do I need to keep them in check? I've never really bothered with anything but I look like I've been dragged through a hedge by mid morning.
