Extension - contract?

Hi, we are hoping to start our extension later this year: planning and buildings approval in place and builder found. He's emailed through a quote (rather than an estimate) but I've read a few times now that we should set up a contract and/or schedule of works with him. Can someone explain what this involves, and maybe point me to an example?

If he is a member of the Federation of Master Builders then they have a standard form of contract which they use, otherwise a JCT contract is a good starting point - minor works.

Really essential to have one as it will cover stuff like price, payments, variations, snagging, insurance, h&s on site etc etc you will also need a detailed specification for the work so that you know what is, and what isn't included in the price.
