Vegetables that freeze well?

Not a big fan of frozen veg that you can buy (apart from sweetcorn and peas) as I find them too watery. Are there any vegetables that freeze well from fresh and don't end up a pile of mush once defrosted/cooked from frozen?

Blanche them first- boil for about 3-4mins, rinse under cold water then freeze.

beans - blanche, and freeze.
peppers - slice and freeze, can only use in stir fry etc, but taste fine.
courgette - grate them, then add in to casseroles etc for extra veg
brocolli and cauliflower, cut into florets, bag and freeze

But most veg doesn't serve well from frozen, better to add it into other dishes

Frozen sweet potato mash and frozen spinach , they are pretty good. Unless you don't like spinach. Frozen mushrooms are ok if you chuck them in a casserole for example.

And frozen parsnips, they work out ok.

Look at what frozen veg you can buy. That tells you if it freezes well.

Peppers
Onions
Peas
Mashed potatoes
Potatoes prepped for chips or roasting
Any root veg
Spinach
Chopped cabbage
Broccoli
Cauliflower
Butternut squash
Plenty of fruit can be frozen too

Courgette ~~ slice into rounds not too thinly, fry briefly in butter or butter/oil, allow to cool, freeze on trays, when frozen pack into bags, you can just scoop out how much you need. Use from frozen, works well for frittata, pasta primavera etc etc.

Tomatoes ~~ make into a rich tomato sauce, freeze in portions, use as pasta sauce, ring the changes with chopped olives, capers, diced gherkins, fried aubergines.

I use all frozen veggies to either soups or sauté/ stir fry them. I’m freezing apples at the moment and the apple corer slicer is very handy I should say 😅
