What's for dinner- healthy pregnancy friendly meal ideas

Hi!

Thought it would be a nice idea to share our yummy dinner ideas! I'm always looking for quick tasty and healthy dinner ideas since I'm always too tired to spend an age in the kitchen cooking!

What are you all having for dinner tonight?

I'm having leeky pasta - sweat leeks in a pan with butter and black pepper, stir in cooked pasta :)

Tomorrow having aubergine, chickpea, tomato homemade curry: fry onion and cumin seeds in a wok, add more oil and chopped aubergine, fry til soft, add chopped tomatoes, garlic, ginger and spices, bubble away, add drained chickpeas and garam masala at the end.

Falafel wraps: Corn tortillas, salad, yoghurt and falafel. Healthy and yum!

Am pregnant and feeling guilty for not eating proper meals whilst DH is away with work so just been to the supermarket to get some decent food.

A favourite quick meal is tandoori chicken leg: skin and slash a chicken leg, smother in plain yoghurt mixed with tandoori spice or paste, and put in the fridge until ready to cook. To cook' stick it in the top half of a hot oven for approx 35 mins or until juices run clear and the outside is slightly crispy. While it is cooking make some salad, and serve with mango chutney or plain yoghurt and rice or naan. The legs are really good value compared to breast, have much more flavour, and it is one of those meals that require very little actual cooking.

I had that last night though, so tonight will probably be bolognaise as I have some in the freezer.

I find I'm craving protein meals, so meat, fish, eggs.... rarely veggie. I made a veggie chilli last week but caved at the last minute and served it with a poached egg on top. H looked on in horror and declared that only a pregnant woman could find that appetising.

I love bbcgoodfood.com - it has hundreds of healthy, quick and tasty recipes with pictures and easy instructions. Most of the meals I cook are from there! On the home page there are lots of different categories - there is one for healthy low-fat meals, quick suppers, freezable meals - or you can type in an ingredient or key word and get a list of recipes which include it.

I just made a tuna lasagne with courgettes, mushrooms and onions. Took 40 minutes from scratch so not quick but certainly easy, healthy(ish) and tasty.

We've had beef stew; not quick since DH had put it on late afternoon but quick for me as it was simmering on the hob when I walked through the door at 7.30, tired, hungry and rained on from walking home. Lovely and waming and meat just fell apart.

Chicken fajitas with extra peppers, chopped tomatos and wholemeal tortillas is a quicker option or pasta with homemade tomato sauce. I swing from homemade dinner cooked from scratch to convenience food such as supernoodles.......
