Pan frying means deffo shallow frying, sometimes when people say 'frying', they mean deep frying.

yes NQC has it pan frying to distinguish from deep-fat frying.

Snobby restaurants and gastropubs use it to mean it hasn't been in a deep fat fryer so they are a cut above an ordinary chippie. And justify a few extra ££££. Usually red mullet or sea bass. But it's still fried, who cares where it's been cooked as long as it tastes good?
