Is the C hard or soft in 'srongylocentrotus'?

There's more than one convention.

At school, I was taught hard "c" always.

But other conventions use soft and even "ch" (think " excelsis").

I've never come across the word you're after, so sorry not to be much help.

Likewise, onimolap, hence my uncertainty.

And I mis-spelt it - should be sTrongylo etc.

Hard c in latin i though, it was always blooming Cerberus and Calcius when i was at school

Hard c in classical Latin, but Church Latin uses soft c (hence excelsis). Scientific nomenclature I am not so sure about, but would assume hard c if in doubt.
