Low-carb diets

What are your favourite, low carb, vegetarian and vegan recipes / snacks please?

Just that really Smile.

I’m not actually low carb, vegan or veggie! But I’m trying to lose weight while sticking to mainly plant based with a small amount of eggs, dairy and just occasionally fish or meat.

I’m about to order my shopping to be delivered on monday and I’m looking for inspiration.

Bowl of soya yoghurt with a few frozen berries and a teaspoonof maple syrup
Mashed avocado with lemon juice and chilli flakes on rice cakes
A bag of "Lentil curls" (instead of crisps)
Small handfull of nuts
Sliced apple with nut butter
Carrot sticks with low fat or home made

Hmmm hungry now!

If you want low carb then maple syrup, rice cakes, lentil curls, apples and hummus really don’t fit the bill.

I mostly don’t eat breakfast, but if I do it’s full fat Total Greek yogurt, occasionally with a handful of berries and/or chopped up almonds or avocado, cheese & food doctor seeds.

Salad - rocket, radish, avocado, cucumber, spinach etc - and a small amount of beetroot or tomato or pepper etc with a low carb dressing and either cheese, basil tofu (Waitrose near the salads) or cold cauldron sausages with seeds. Sometimes cooked mushrooms or halloumi.

Various vegetables with a cheese or mushroom sauce
Salad
Stir fry veg
‘Wraps’ using a large lettuce leaf instead of wraps
Oven baked kale with a sprinkling of cheese
Cauldron sausages, mashed veg (cauliflower, brocolli, courgette)
Broccoli, kale, courgette with toasted pine nuts
Soup

...I’m a low carb vegetarian (no eggs either), it isn’t easy. I eat vegan ‘on & off’ but find it quite restrictive when low carbing.

I very rarely feel the need to snack when I’m low carbing, but if I do I have almonds or macadamias or a bit of tofu or cheese.

Why don't you hop over to the Bootcamp topic, and look at the recipe threads there? Loads of recipes! All curated by meat/fish, vegetarian, chicken/poultry, etc

Maple syrup isn't low carb, nor are rice cakes, nor are lentil curls, nor (especially) is an apple

... and nor is hummus - whether home-made or not
