Low-carb diets

Peanut butter

Just seeking some clarification about how suitable for low carb dieting peanut butter is. I'm doing ok with general low carbing, and intermittent fasting, as have been diagnosed early stage type 2 diabetes so want to reverse it if possible with diet.

However I sometimes need something quick and filling, and a finger scoop or two of peanut butter does the trick, but have read conflicting things...so pb , no toast or bread, low sugar variety. yay or nay?

I have no idea what the experts would say but I low-ish carb and occasionally have peanut butter.

I usually have the sugar/salt free variety and eat it with sliced apple or banana, or if I'm being terribly naughty, Melba toasts or rice cakes.

It's high protein but obviously high fat too. I find it very, very filling.

It's also great as a marinade too - esp. chicken satay.

Stir fried chicken with loads of veg and home made satay sauce would be low carb appropriate I assume.

I love peanut butter and although it's not exactly low carb as it's a legume, I did find it an absolute saviour.

Peanut butter on celery is delicious - it's filling, gives crunch and a salty/sweet taste - it stopped me from going off the rails. A teaspoon or or so in a moment of craving could get me past it without falling face first into a bar of chocolate or bag of kettle crisps!

Thing is, carb counts vary hugely according to the brand - what does it say on the back of the jar?
