I think I'm going to try the GI diet. I've had a read online and I think I'll get a book from eBay, but a lot of the recipes seem quite long-winded and use a lot of ingredients I'm not familiar with, and worst of all, use American foods and measurements which instantly puts me off!
In the last couple of days I've been eating omelettes with mushrooms, ham, sweetcorn, and tomato; baked beans and boiled egg on toast; pitta with chicken and hummus...I don't mind making the odd stew or soup but I want more ideas for quick meals using ready-bought ingredients if that's possible. The thing is, I suddenly get VERY hungry and want to eat straight away and if I have to prepare too much I just eat something quick that's inevitably bad for me, like a white bread sandwich or a ready meal. I get panicky and light-headed when hungry, which is part of the reason I want to do GI as I think this must be blood sugar related.
Another problem is breakfast. I am ravenously hungry when I wake up and have always eaten breakfast straight away, I can't function otherwise. It kills me on holiday when I have to get washed and dressed and walk to the restaurant before I can eat, that's how bad it is! I usually eat Special K (aka Aldi Benefit ) but I understand this is a no-no, and anyway when I have this I'm usually starving by 11am and have a piece of toast with honey. For this reason I know I won't be able to cook eggs or porridge first thing, it just takes too long and I am so grumpy until I eat (I appreciate this sounds pathetic). Would a slow cooker be a good investment, do you think? Then I could get up to ready made porridge?
