1cupsunflower seeds1cupunsweetened flaked coconut1cuppumpkin seeds1cupsliced almonds1/2cuppecans1/2cuphemp hearts2teaspoonscinnamon1/2teaspoonvanilla extract1/4teaspoonSweetLeaf Stevia Dropsor vanilla stevia drops

Instructions

In large bowl, stir together all ingredients until well combined.

Lay out on a rimmed baking pan and bake at 350F for about 7-8 minutes.

Allow to cool. Store in air tight container.

Each serving is about 1/3 cup. Tastes great with almond milk!

Looks ok for after the first 2 weeks (when you can't have nuts).

It's quite similar to the muesli I make for ds - although it's not specifically low carb (it's got rolled oats and a small amount of maple syrup rather than stevia), it's packed full of various nuts and both coconut and olive oil. I also add some lightly beaten egg white.

The only thing of add to enhance the flavour is some salt.

That's clearly a recipe based on calories though! And 6.1g carbs sounds a bit on the high side, especially if you have it with milk.

There's a low carb granola recipe on the Bootcamp threads (I think it's on the vegetarian recipe thread) which is a bit lower in carbs than that, from memory.
