Advice from Hong Kong MNetters needed: Red Envelope Wedding Gift etiquette

We have been invited to a wedding in HK - ceremony, lunch at one of the 5-star hotels, etc. We are flying in from the UK, so not too familiar with customs. I know that the usual etiquette is giving a red envelope with cash inside. My question is... how much?

From what I have seen online the going rate for a red envelope for this kind of wedding (lavish banquette at a 5-star hotel) should be a minimum of HK$1,000 per person - so just over GBP100 per person, and less if the lunch is held at a restaurant - but I'm really not sure whether this is old info or not.

We are thinking of giving HK$1,300 per person (so HK$2,600 altogether). Does this sound alright? Help!

Also, you should give as few notes as possible- so 5 x 500 and 1 x 100. Notes should also be clean/ fresh from the cash point and not scrumpled up ones Grin.

I have always been given packets in pairs. So 2 envelopes each containing the same amount of money.

dessert Is that for Chinese New Year? If so, it maybe because you have 2 children- my boss gives me two on this basis. Or it can be because they want to give you a set amount and they've made up all their envelopes to the same value.

CNY and our wedding.
We got pairs of envelopes before kids, and now the kids get pairs of envelopes. Maybe it's a thing specific to that village??
