Mince recipes?

Cooking a meal for dh, his friend and a couple of kids tonight, I have mince, vegetables, a cupboard full of stuff ... but I am missing inspiration.

I want to do something that I can put together or cook this afternoon, that I can just reheat or finish off later. The less faff the better, because I also have to cook a vegetarian meal as well.

Any suggestions gratefully received.

Shepherd's Pie is better than, say, spag bol from the viewpoint of do it now then just stick it in the oven later. Something like that?

Yum, mince curry. You could make a veg curry too then you would only have the rice to do for both meals later.

Mmmm, thanks. I'm just very short of inspiration at the moment! I also have half a ton of potatoes that I could use with it (I ordered three baking potatoes from Tesco; they delivered three BAGS of baking potatoes).

Moussaka? Although it is a bit of a faff. Dry fry mince, aubergine and onion until browned then add courgette, garlic, passata or tinned tomatoes and simmer for about 35 mins. Par boil potatoes for about 6 minutes. Do a basic cheese sauce of milk, flour, butter and cheese. Put together then when you are ready to cook cook in oven for about 25 minutes.

Well in that case, I'd make the curries and serve them on baked spuds instead of rice.

Really fancy a curry now.

I've done that loads of times, wwb. Ended up with 7 kilos of potatoes once, instead of 7 potatoes - and 4 packets of 4 leeks, instead of 4 leeks.

I don't have any aubergines otherwise I might have done a moussaka ... ah, bugger it, jacket potatoes and curried mince is sounding like a good option!

Moo, the best was when I ordered 2 heads of broccoli and ended up with 2 kilos. That's an awful lot of broccoli
