Wash them in warm water then store them in isinglass. They will keep fresh over winter.

They came to be mine under a bizarre set of circumstances. I would quite like to eat them.

Use them just like chicken eggs in cakes, cooking etc. I personally don't like them fried/boiled, they're a bit 'rich' somehow, though plenty of people do (dd will eat them perfectly happily fried or scrambled). But they work just fine in recipes.

I would use them as chicken eggs for a 'special' recipe, say eggs benedict or somthing, they are very rich but quite tasty.

What's isinglass?

They are lovely soft/ medium-boiled, it's a lovely treat - more velvety than chicken eggs. If you have that many you can definitely afford to indulge now and then.

NB if you decide to scramble them, blow them and wash and keep the shells to decorate for easter - they take watercolours etc way better than the shells of hens' eggs.

Sorry for the late response but they make really good meringues too - 2oz caster sugar per egg white.
