Oh bawls. After all that spanakopiter advice I've only gone and defrosted puff pastry by mistake. Idiot!

What shall I make instead for my tapas night?

Usable ingredients...

Puff pastry
Spinach
Feta / parmesan / a bit of other cheese
Red onions / spring onions
Cherry tomatoes
Fresh mint
Cupboard stuff (pine nuts / spices / herbs / eggs etc)

Something simple please. I am tired and my children are cranky.

Make the spanakopita with puff pastry, it'll still be yummy. It'll be more like the individual pies they sell in Greece in bakeries like this cheese pie.

Very authentic, promise.

AND I can use the leftover spinach stuff to make pasta sauce for the family. Win win.

Oh, they're puff pastry? They just look like the things in my book so I assumed they were the same. My book thing is something you fry? I must check and report back.

Actually they can also be layers and layers of phyllo pastry, but from what I know, they're baked.

What are the things in your book called? Are they savoury or are they drenched in syrup after they're fried?
